Eggless Tutti Frutti Cake

A soft fluffy cake loaded with colourful tutti frutti sounds like a fun cake to eat. I have used homemade tutti frutti in this eggless tutti frutti cake. It is completely free of preservatives and the taste is uncompromised. You can use a simple vanilla sponge cake recipe to make this eggless tutti frutti cake.
I have used wholemeal flour to make the eggless tutti frutti cake. Also I have baked it in a loaf tin making it more tutti frutti loaf than a cake. But then who’s to judge, it’s all fun to eat! Adding yogurt or buttermilk to cake makes the crumb really soft and moist. Use good vanilla to flavour your cake, makes a lot of difference. Avoid using artificial vanilla or other flavouring substances in the interest of taste and health.

Ingredients
  • 1½ Cups wholemeal flour/Atta
  • 2 Tbsp corn starch
  • 1 Tsp baking powder
  • ½ Tsp baking soda
  • ⅔ Cup sugar
  • ½ Cup sunflower oil
  • 1 Cup yogurt/curd
  • 1 Tsp vanilla
  • ¼ Tsp orange extract
  • ½ Cup tutti frutti
  • ½ Cup milk or as required
Method
  1. Take wholemeal flour or atta in a bowl
  2. Add baking powder and soda, mix well
  3. Next add corn starch and mix well
  4. Sugar can go in next, mix well
  5. Now take 1 Tbsp of this dry mixture in a small bowl
  6. Drop in the tutti frutti, toss with the dry mixture
  7. Back to the dry ingredients, make a well in the centre
  8. Add smooth yogurt
  9. Pour oil and fold the ingredients
  10. Pour milk and fold the batter well
  11. Add good vanilla and orange extract, mix lightly
  12. Lastly add dusted tutti frutti we prepared earlier, fold well into the batter
  13. Grease a loaf tin or cake pan with butter
  14. Pour the prepared batter into the tin
  15. Tap and level the batter, pre-heat the oven to 180 Deg C
  16. Bake at 180 Deg C for 35 mins or till toothpick comes clean
  17. Let it cool, cut into slices
  18. Enjoy eggless tutti frutti cake!
Notes
Use any unflavoured oil instead of sunflower oil if you want

You can use maida or substitute half the flour with maida

Thick buttermilk can also be used instead of yogurt

Adjust cooking time as per you oven model and the tin/pan you are cooking in

Eggless Tutti Frutti Cake Stepwise:
Take wholemeal flour or atta in a bowl

Add baking powder and soda, mix well
 
Next add corn starch and mix well
 
Sugar can go in next, mix well

Now take 1 Tbsp of this dry mixture in a small bowl

Drop in the tutti frutti, toss with the dry mixture
 
Back to the dry ingredients, make a well in the centre

Add smooth yogurt
 
Pour oil and fold the ingredients
 
Pour milk and fold the batter well
  
Add good vanilla and orange extract, mix lightly
  
Lastly add dusted tutti frutti we prepared earlier, fold well into the batter
   
Grease a loaf tin or cake pan with butter

Pour the prepared batter into the tin

Tap and level the batter, pre-heat the oven to 180 Deg C
 
Bake at 180 Deg C for 35 mins or till toothpick comes clean
   
Let it cool, cut into slices
