Eggless Strawberry Banana Crepes

Soft and delicious crepes for breakfast sounds really fancy and fun! So for this pancake day, FOI is back with the recipe of eggless strawberry banana crepes recipe. They are quite easy to make and you can serve up a filling breakfast in no time.
For eggless strawberry banana crepes, you can mix the dry mixture the previous night. In the morning, all you need is to pour required amount of milk and make the batter. Some ripe bananas and strawberries for the filling takes these crepes to another level!


You can make these with any kind of fruits you like, may be some raspberries, kiwis or may be even some mangoes. Just see how it goes or even serve with honey and bananas on the side. Ingredients
For Batter:
  • ½ Cup all purpose flour/maida
  • 1 pinch baking soda
  • 1 pinch baking powder
  • Salt to taste
  • 1 Tbsp butter
  • 1 Tbsp sugar
  • ¾ Cup milk + extra as required
  • 1 Tsp good vanilla
For Filling:
  • 1 ripe banana
  • 4-5 strawberries
  • ½ Tbsp brown sugar/organic cane sugar
  • Few drops good vanilla
  • 2 Tbsp cream
  • Chocolate chips as required
Method
  1. In a bowl, add the all purpose flour/maida
  2. Add baking powder and baking soda
  3. Sprinkle a pinch of salt and the sugar
  4. Pour milk slowly and make into a batter, it should not be very thick
  5. Melt butter in a small pan
  6. Add melted butter into the batter
  7. Next add some good vanilla for a nice flavour
  8. Slice the banana and dice the strawberries
  9. Sprinkle some sugar onto the fruits and mix well
  10. Add few drops of vanilla
  11. Heat a tawa or skillet
  12. Pour a ladleful of crepe batter and spread into a thin crepe
  13. Let it cook
  14. When underside is cooked, flip and cook for a few seconds
  15. Flip again
  16. Add a spoonful of fruits onto the crepe
  17. Next add a small spoon of cream
  18. Sprinkle a few choco chips
  19. Fold as shown
  20. Serve immediately!
Notes
Do not overbeat the batter, lightly mix

Using a non-stick tawa is best to make crepes or season well with some butter

Use any filling of your choice, or just serve with some honey and bananas on the side

Eggless Strawberry Banana Crepes Stepwise:
In a bowl, sift the all purpose flour/maida

Add baking powder and baking soda
 
Sprinkle a pinch of salt and the sugar

Pour milk slowly and make into a batter, it should not be very thick
  
Melt butter in a small pan
 
Add melted butter into the batter
  
Next add some good vanilla for a nice flavour
 
Slice the banana and dice the strawberries
 
Sprinkle some sugar onto the fruits and mix well
  
Add few drops of vanilla

Heat a tawa or skillet

Pour a ladleful of crepe batter and spread into a thin crepe
 
Let it cook

When underside is cooked, flip and cook for a few seconds
 
Flip again

Add a spoonful of fruits onto the crepe

Next add a small spoon of cream

Sprinkle a few choco chips

Fold as shown
 
Serve immediately!
