Tortilla Pocket

Fixing kids snacks and dinners is always a daunting task. You have to think of ways of providing them the required amount of nutrients. Getting them to eat vegetables and to drink milk is a challenge. I am sure most of you have faced this if you have little kids. Try this fun to eat, whole wheat tortilla pocket.
It has vegetables which provide fibre, olives and olive oil providing some good fat and cheese with some calcium. Of course using whole wheat flour to make tortilla or roti to put the filling into makes it extra fibrous and healthy.


I have made a capsicum/bell pepper sauce to go with the pockets but you can also use some ketchup instead. But I assure you, making the sauce fresh at home makes a difference and is definitely healthier. Try more kid friendly recipes from FOI, chapathi rolls, spinach corn quesadilla.

Filling and a hit with the kids, loaded with vegetables, cheesy tortilla pocket

Ingredients
For Filling:
  • 1 sliced onion
  • 1-2 chopped tomato
  • Little chopped parsley or coriander
  • 1 Tsp crushed black pepper
  • 1 Tbsp olive oil
  • Salt to taste
For Sauce:
  • 1 Cup diced coloured capsicum/bell pepper
  • ¼ Cup mixed olives (pitted)
  • ¼ Cup diced feta cheese (optional)
  • Salt to taste
  • Black pepper to season
  • 1 Tsp olive oil + 2 Tbsp olive oil
For Tortilla Pocket:
  • Whole wheat flour dough as required
  • Sliced avocado
  • Cheese slices
  • Oil to roast
Method
  1. First let's make the sauce. In a pan heat 1 Tsp olive oil and add diced capsicum/bell pepper
  2. Once the capsicum/bell pepper soften a bit, turn off the heat and let it cool
  3. Add the cooled capsicum/bell pepper and pitted olives
  4. Also add the diced/crumbled feta cheese
  5. Season with black pepper and very little salt (remember feta has salt)
  6. Slowly drizzle olive oil and blend into a sauce
  7. Slice onion and tomato
  8. In the same pan, heat little more oil and add sliced onions
  9. When the onions soften, add sliced tomato
  10. Season with black pepper and salt
  11. Sprinkle chopped parsley and mix well, keep aside
  12. Next assemble all ingredients, sliced avocado, cheese, sauce and filling
  13. Roll out all tortilla and keep them ready
  14. To make pocket, take a rolled tortilla, place on hot tawa, spread some sauce in the centre
  15. Spoon some filling on the sauce
  16. Place a sliced cheese on top
  17. Next fold the sides and make a parcel as shown
  18. Apply oil and roast well
  19. Roast till golden and till cheese melts
  20. Slice and serve with remaining sauce and sliced avocado!
Notes
You can also use corn tortilla or chapathi dough

You can also use ready organic ready tortilla if you wish to and speed up the process

Add other vegetables to the filling like mushrooms, capsicum etc

Tortilla Pocket Stepwise:

To make tortilla pocket, take a rolled tortilla, place on hot tawa and spread some sauce in the centre

Spoon some filling on the sauce

Place a cheese slice on top

Next fold the sides and make a parcel as shown
  
Apply oil and roast well
  
Roast till golden and till cheese melts
  
Slice and serve with remaining sauce and sliced avocado!
