Tomato Paratha | How to make tomato paratha?

Soft, delicious and filling tomato paratha for travel or lunchbox

Did you know that tomatoes can be ‘grated’ into a coarse puree. I learnt this recently from an article which mentioned ingredients that can actually be grated. So these grated tomatoes add a new kind of texture to soft tomato paratha. I have used this technique to make super tasty red tomato paratha.
However, tomatoes should be firm and just ripe to be able to grate them. Of course, they should also be fresh. Nothing stops us from pureeing the tomatoes in a blender. That would work well too. ... “Tomato Paratha | How to make tomato paratha?”

This is a basic eggless version of chocolate cake and can be used to make other delicious cakes with thick frosting, layered cakes, festive cakes and much more.
Making cakes does not need to involve eggs at all. Cakes still turn out to be moist and soft. Moreover I have used whole wheat flour to make this cake. And I bet you would not notice any difference. How’s that for a healthier version of your favourite dessert, chocolate cake!

Jalapeno Cheddar Corn Bread | Mexican style cornbread

Soft, moist cornbread with pop-in the mouth corn niblets
11/11/2016 9:49:48 PM vindhyadesai

Generally most of us eat regular white bread or nowadays health conscious people eat whole wheat bread. But did you know that different countries especially like India, Mexico, Italy, France have their own specialty breads. In India, of course we have rotis, phulkas, chapathis, kulchas, naans, yes, the list is endless. Similarly in Mexico they have different types of bread like tortillas, corn bread etc. They are a corn loving nation and their corn tortillas are so good!
Corn bread is a very different bread and unique in taste. It is so moist and soft almost like a cake that it can be served just on its own without anything on the side. Here I have served it with guacamole, a Mexican condiment like our chutney. Corn bread has these pop-in the mouth corn niblets with tiny puddles of corn sweetness filled in them. Yum, to say the least! ... “Jalapeno Cheddar Corn Bread | Mexican style cornbread”

Kayi Holige | Kayi Obbattu | Nariyal PoLi | Coconut Holige | How to make kayi obbattu?

Soft and crunchy sweet coconut/kayi holige, a special dish for the festivals
10/10/2016 10:28:16 PM vindhyadesai

Wish you all a very happy Vijayadashami/Dasara! Coconut holige/kayi obbattu/nariyal poLi is one of my favourite sweets. It is soft yet crunchy on the outside and it has the unmistakable flavour of coconut. Unlike many other dishes where coconut gets lost in between other ingredients, here it is the main ingredient and it gets due importance. Most functions in Karnataka have holige/obbattu/poLi as the main sweet. Usually beLe holige or this kayi holige steal the show and are made in the order of hundreds. They are made with maida/all purpose flour which can make the edges quite hard and the filling inside might not be sufficient to make them soft yet crunchy. I always try and make recipes with whole wheat flour, for the fibre, taste and it makes the holige so much more softer and they hold together beautifully. Make these and a few can be made quite quickly and is not all that difficult. ... “Kayi Holige | Kayi Obbattu | Nariyal PoLi | Coconut Holige | How to make kayi obbattu?”

Theplas are Gujarathi masala/spicy rotis made with light spices, vegetables or greens like methi/fenugreek leaves. Theplas have simple spices like fennel/saunf and the dough is kneaded with a little yogurt which makes them soft. Adding methi leaves makes them extra tasty and flavourful. These are one of the most portable dishes, they are easy on the stomach, have very less oil yet soft and filling. They are kid-friendly and this will definitely make them like and eat their greens. Make this for picnics, travel, lunch box or even for a light dinner. More homemade parathas/bread/rotis on FOI. Mixed Veg Enchiladas | How to make Mexican Enchiladas?

Hearty, filling, mixed vegetable Mexican Enchiladas
9/08/2016 7:48:02 PM vindhyadesai

Enchiladas is a Mexican tortilla based dish. Tortillas covered with sauce, finished off with cheese and baked in the oven till cheese melts. This is very hearty and filling, spicy and cheese’y and how can that not taste good! I have used leftover Mexican mixed bean veg chilli which I have posted earlier. Any kind of tortillas can be used, corn, whole wheat, plain tortillas, anything you like. I have also used hung yogurt to make the filling for the tortillas instead of sour cream to cut the calories. I have also used sliced avocado for the filling but you can use boiled corn, olives, onions, tomatoes, anything you like. This is one of those dishes you can make it your own. Add anything you like, make variations and enjoy! Other Mexican dishes to try. ... “Mixed Veg Enchiladas | How to make Mexican Enchiladas?”
