Is it a cake, is it ice cream? As the name says, it is ice cream cake. Ice cream filled into a cake base and frozen back to solid. This is recipe number 100, a big milestone for Food Of Interest. Thank you to all those who have liked Food Of Interest and for trying out my recipes. It is my humble effort to try out and document Vegetarian/Vegan recipes from India and all over the world. This decadent, indulgent ice cream cake is adapted from Chef Lorraine Pascale‘s ‘Indulgent Ice Cream Cake’. It has a Swiss roll cake base (plain cake with layers of jam or marmalade all rolled into a tight roll) and vanilla ice cream filling. Use Swiss roll cake if you get it or try homemade one (recipe will be posted on FOI), or use regular Pound cake for the base. Layering a bowl with cling wrap is very essential for the cake to be inverted from the bowl and that resembles a half-spherical cake. More details in the recipe below. Gazpacho – Spanish Mixed Vegetable Cold Soup

Gazpacho is a cool soup made using finely chopped vegetables. Simple flavours are added like vinegar, black pepper and garlic. Use garlic sparingly, a small piece gives a great hum of flavour to the soup. It is great served at room temperature or slightly chilled. This is freshness at its best! Gazpacho originates from Spain with many variations that have evolved. Greek Gazpacho is also quite famous with added Mediterranean flavours like feta cheese, olives.
This is a healthy soup, with tomatoes and cucumber as the base. Some like it completely pureed and some like it chunky but the best way at least for me, is the soup blitzed till it is slightly pulsed but still has some texture. Save a few finely chopped veggies to add on top of your soup, that way you know what exactly you are tasting. Enjoy this super cool soup, read more about Gazpacho! Super creamy homemade favourite eggless vanilla ice cream

I have not met a single soul who does not like ice cream especially vanilla ice cream. It has to be one of the most eaten, desired and versatile desserts in the world. Make ice cream at home without worries of added preservatives, artificial flavours and colours. This recipe does not involve any cooking at all. There is no need of making a custard for this recipe. The most important thing is to keep all ingredients and your ice cream container chilled and cold at all times to prevent crystal formation and solidfication during churning/blending.
I have used my ice cream machine to churn the ice cream mixture. But it can be very easily churned with a simple everyday use electric hand blender which I will describe below. It is a little extra effort when using an electric blender but worth it nonetheless. I do not have to mention the uses of vanilla ice cream, it is super tasty just plain, or with chocolate brownies or simply whipped up into a milkshake like musk melon vanilla milkshake or this decadent peach and blueberry crumble. Mango Kulfi | Aam Kulfi

The most preferred dessert when you are looking for an authentic traditional recipe. Mangoes and thick milk flavoured with elaichi, kesar and pista-badam that is a dream combination of ingredients. It used to be made using thick milk rabri/rabdi and adding flavours to it. As the recipe has evolved over the years, it is made with condensed milk, evaporated milk etc. The thick mixture is then frozen in matkas (earthernware pot) to make matka kulfis. Now, one can buy kulfi moulds from shops or even use glasses to freeze kulfis.

A speciality chutney from North Karnataka. Raw mango chutney or maavinakayi chutney that can be preserved like a pickle for a good few weeks. It is very tasty and is a must-have side dish in most households in North Karnataka in summer. I learnt to make this from my mother, it is her signature chutney. Use raw mangoes which are not very sour so that a lot of jaggery is not required. Make a big jar of this, use it to smear on hot chapathis with ghee, hot steamed rice with chutney and groundnut oil and aralu sandige. You have a nice and juicy musk melon (kharbooja/kharbooj) and do not know what to make with it? Try making a creamy milkshake and serve it chilled. It can also be made into a juice (panaka) generally made during Ram Navami festival. Musk melon is a species of melon with many varieties like cantaloupe, honey dew. These fruits are very flavourful and are very pulpy. They are a rich source of Vitamin A and very rich in natural juices because most of the melon is water. I had a Galia musk melon(scales like skin). In India, Cantaloupe variety is generally available (distinctive longitudinal lines). Aamrkhand or mango shrikhand or aam shrikhand is a mango and yogurt based no-cook dessert. It’s the mango season! Mango the king of all fruits makes this dessert very special. It is light and creamy and the mango flavours ooze through from the dessert. If the mangoes are sweet only a little sugar will be enough to cut through all the flavours. Saffron is added for enhanced flavour and gives a deep colour to shrikhand. Hung curd or yogurt separated from all the whey is used to make aamrkhand. I also love making kesar elaichi shrikhand.
