Colourful and fun, homemade tutti frutti for ice creams and baking
06/07/2018 12:55:35 PM vindhyadesai

As a child I was always fascinated with colourful tutti frutti pieces. I used to like munching on them straight out of the packet. But good tutti frutti is always hard to find as most of them have artificial colours and preservatives. So how about we learn making tutti frutti at home today?
Like with many confectionary items, tutti frutti can be used to make bread, cakes, biscuits and ice cream. It can also be used as topping in many chilled drinks such as mango lassi. I have already posted dil-pasand recipe and used it in thick and delicious mango mastani. Next up however is super delicious eggless tutti frutti ice cream. ... “Tutti Frutti | Homemade Tutti Frutti | Homemade Recipes”

Sabbakki Happala | Sabudana Fryum | Sabudana Papad

Crispy, perfect in texture and taste, homemade sabbakki happala
06/05/2018 1:26:28 PM vindhyadesai

The quality of a meal almost entirely depends on the side dishes and condiments that are served with it. They pretty much define your food! For a typical South Indian everyday lunch it will have saaru/rasams like menasina saaru (pepper rasam), carrot saaru and sambars like sorekayi kootu, Mangalore southekayi sambar. Some sabudana happala to go with, yum!
Then there are side dishes like a palya and some saasme/raitha. Pickles and papads and happala must feature with these kind of dishes. We used to make happala and sandige at home every year during the summer holidays. A mango based lunch followed by making these happala and sandige used to be a big family affair. Pickling also was a very important activity to bring the whole family together. ... “Sabbakki Happala | Sabudana Fryum | Sabudana Papad”

Veg Fried Rice | Fried Rice | Indo Chinese Recipes

Yummy veg fried rice with bright coloured stir fried vegetables
06/03/2018 9:05:47 AM vindhyadesai

Back with another street food from FOI. This time it’s an Indo-Chinese dish, street style veg fried rice. Along with pav bhaji this used to be my favourite dishes to order in canteens near my college. A platter of gobhi manchurian to share with friends, the perfect combo! This time I made paneer manchurian to serve with veg fried rice. It also tastes delicious with veggies in hot gravy sauce. I have posted a few pictures below from another time.
For me the hit of this dish, veggies of course but it is freshly pounded black pepper which adds the distinct taste. It brings out the flavour of all the veggies and the slightly burnt taste gives it an unique flavour.

Imagine a rainy evening and you are digging into a plate of spicy and buttery pav bhaji. Pav bhaji needs no introduction, it is the most loved street food. It is from western part of India specifically from Maharashtra but famous throughout. Different states make it in different ways but the base is pretty much the same.
Loads of butter in a spicy gravy all mashed into a delicious gravy. This gravy is served with butter toasted pav or buns. Some chopped onions, chopped coriander, a lemon wedge and a dollop of butter adorn the pav bhaji plate. I generally use homemade pav bhaji masala to make pav bhaji but you can make use of store bought masala too. ... “Pav Bhaji | Street Style Pav Bhaji | Snack Recipes”

Beetroot Halwa | Halwa Recipes | Sweet Recipes

Bright, sweet and delicious beetroot halwa
05/30/2018 12:21:51 PM vindhyadesai

Halwa is one of the easiest sweet dishes to prepare. It is quite easy to get the correct consistency when one follows a recipe. Beetroot halwa definitely falls in that category. Bright coloured grated beetroot simmered with milk and sugar and adorned with ghee fried cashews and raisins. That is a winner!
Beetroot halwa sounds rich and indulgent and for me the colour is the biggest factor of this delicious halwa. We always make carrot halwa and is pretty common across India. But beetroot halwa can also be just as delicious and because beetroots are naturally so sweet they make the halwa sweeter. ... “Beetroot Halwa | Halwa Recipes | Sweet Recipes”

Hot huLi a.k.a sambar with rice is a staple in most households in South India. Different regions of course have different ways of making sambar. Varieties of sambar with different vegetables are made. Each type of sambar is different as the masala added varies and vegetables render a special flavour of their own. Mangalore southekayi huli or sambar is a specialty from the Mangalore, Malnad and Udupi regions of Karnataka.
Soft Mangalore southekayi simmered in coconut masala and dal mixture is a super combination. Mixed with hot steamed rice and some ghee on top is a match made in heaven. Mangalore cucumber/southekayi is a cucumber variety grown in Malnad region and it has a very unique taste and texture. It is not very watery like regular cucumber and somewhat resembles a small white pumpkin in texture. ... “Mangalore Southekayi Huli | Mangalore Southekayi Sambar | Sambar Recipes”
