Nowadays I’m trying to mix up different grains, millets and their flours to make rotis or the ever favourite thalipeeth. Wholesome, nutritious and more importantly delicious filling multi grain thalipeeth is what we will learn today. You can add fun things into your thalipeeth and it beats fancy “flatbreads” anyday.
For the multi grain thalipeeth I have used ragi, bajra, jowar, rice flours and also I have added some rava for texture. Along with these flours I have also added grated carrot and zucchini. But you can also add grated daikon radish, chopped onions, grated cucumber or chopped methi leaves. The options are endless.

- ¼ Cup bajra flour/sajje hittu
- ¼ Cup jowar flour/jolada hittu
- ½ Cup rice flour
- ¼ Cup rava
- ¼ Cup ragi flour/nachni
- ½ Cup grated coconut
- ¼ Cup or half a grated carrot
- ½ Cup grated zucchini or cucumber
- ½ Tsp jeera
- A pinch of hing
- Salt to taste
- ½ Tsp sugar
- 2 finely chopped chillies
- ¼ Tsp red chilli powder
- In a bowl take the rice flour
- To this add rava, bajra flour, ragi flour and jowar flour
- Mix all the dry ingredients
- Add salt to taste
- Sprinkle jeera and add a pinch of hing
- Also add some sugar
- Make a well in the centre and pour ½ Cup of boiling water
- Close the well by pushing the flours onto the water using a spatula or spoon
- Add grated coconut, chopped green chilli and sprinkle red chilli powder
- Next add grated carrot and zucchini
- Mix everything very well
- Add little water if required and make a soft dough
- Oil the tawa, take a fist sized ball of the dough
- Press the thalipeeth with tips of the fingers into a roti
- Make a hole in the centre
- Drizzle some oil and cover and cook on medium flame
- Once the underside is cooked, flip and cook for a few seconds
- Serve with chutney pudi or chutney

Adjust spices as per your taste
Multi Grain Thalipeeth Stepwise:
In a bowl take the rice flour
To this add rava, bajra flour, ragi flour and jowar flour
Mix all the dry ingredients
Add salt to taste
Sprinkle jeera and add a pinch of hing
Also add some sugar
Make a well in the centre and pour 1/2 Cup of boiling water
Close the well by pushing the flours onto the water using a spatula or spoon
Add grated coconut, chopped green chilli and sprinkle red chilli powder
Next add grated carrot and zucchini
Mix everything very well
Add little water if required and make a soft dough
Oil the tawa, take a fist sized ball of the dough
Press the thalipeeth with tips of the fingers into a roti
Make a hole in the centre
Drizzle some oil and cover and cook on medium flame
Once the underside is cooked, flip and cook for a few seconds
Serve with chutney pudi or chutney
