Cool and easy to make mixed vegetable raitha. When you make a dish like pudina pulao or bisi bele bhaat or any bhaat you need something to cool down and mellow down all the spices and hot food. Mixed vegetable raitha is the easiest accompaniment to make with those dishes.

Cool and simple mixed vegetable raitha

Ingredients
- ½ finely chopped cucumber
- 1 or 2 finely chopped tomatoes
- 2 Cups smooth beaten yogurt
- Salt to taste
- Chopped coriander to add on top
For Tadka:
- 1 Tsp oil
- ½ Tsp mustard
- A pinch of hing/asafoetida
- 1-2 broken pieces of dry red chilli
Method
- In a bowl, add chopped tomatoes, chopped cucumber
- Pour over smooth beaten yogurt
- Add chopped coriander
- Add salt to taste. Mix well
- Make tadka with oil, mustard, hing and red chilli. Pour over raitha
- Cool raitha is ready to be served with any bhaat of your choice
Notes
Add grated carrots, chopped onions if you like
Add a pinch of sendha namak (rock salt)/kala namak (black salt)/chaat masala if you like instead of table salt
Mix this just before serving, raitha will be nice and fresh
Use chilled yogurt if you like but make sure it is not sour
Omit hing/asafoetida to make raitha gluten free
