A refreshing salad with Mexican flavours, sounds fancy but I am game for such flavours always. I love pop in the mouth sweet corn, buttery avocado, some herbs like oregano totally lift the flavours of the salad and make it totally Mexican. I went the extra mile and served it with homemade corn bread, just lovely!
On a busy work day evening you can rustle up this Mexican corn salad quickly. Prepare the corn ahead of time and you will have a filling salad ready in no time at all. The red onion slices add a little zing and crunch. And what can I say about avocado the beautiful butter fruit of the gods. They are rich in good fats and so delicious, a nice mouthful.
Avoid using stale corn and canned corn is a no no. Use any flavours you like, chilli flakes, oregano etc. Salads are usually a good way to experiment your flavours. Add a little, taste then add again, adjust as you go. So more salads to experiment with:

- 1 Cup corn just boiled in water
- ½ half moon slices red onion
- 1 diced avocado
- 2 finely chopped jalapeno
- ½ Tsp dried oregano
- ¼ Tsp cayenne pepper
- 1-2 Tbsp sour cream to serve
- ½ Tbsp lime juice
- 1 pinch pepper
- Salt to taste
- In a pan, add corn to some water and bring to a gentle boil, for 3-4 minutes till corn is soft
- Gather all the herbs and seasonings
- Slice onions, peel and dice avocado, finely chop jalapenos
- Drain excess water from corn, and into a bowl
- Next add sliced onions and chopped jalapenos
- Season with salt and sugar
- Give it a quick mix and season with black pepper
- Add diced avocado
- Squeeze in lime juice
- Give everything a good mix
- Serve with a slice of corn bread and sour cream
Jarred jalapenos can also be used if you do not find fresh ones
Lastly adjust the spices as per your taste, salads are fun to make, so customize them!
Mexican Corn Salad Stepwise:

Slice onions, peel and dice avocado, finely chop jalapenos
Drain excess water from corn, and into a bowl
Next add sliced onions and chopped jalapenos
Season with salt and sugar
Give it a quick mix and season with black pepper and cayenne pepper
Add diced avocado
Squeeze in lime juice
Give everything a good mix
Serve with a slice of corn bread and sour cream
