Biting into warm melted cheese is like a dream come true. Sandwich with spinach, sweet corn mixed with white sauce and topped with cheese is one of the best sandwiches ever. I had eaten corn spinach cheese sandwich a few years back on a flight and instantly had fallen in love with this green-yellow cheesy goodness. Since then I have made this sandwich many times.
Sometimes I use frozen spinach and corn and sometimes fresh or a combination of both. There is no difference in taste and tastes heavenly each time.
Simple seasoning like black pepper and nutmeg add those distinct hint of flavours. Nutmeg is my favourite spice to use with spinach, they both go really well.
This sandwich is again an easy way to make kids to eat some greens. It tastes best served warm so how about making this easy snack for an after school evening. It is a sure hit among kids and very popular among adults too! Hail Popeye the sailor man! 🙂

- 1 minced clove of garlic
- 1 Tbsp maida/all purpose flour
- 1 Tbsp butter
- ½ Tbsp olive oil/regular oil
- ½ Cup milk
- ½ Cup packed chopped blanched spinach/frozen chopped spinach
- ½ Cup sweet corn kernels
- Salt to taste
- ½ Tsp freshly ground black pepper
- A pinch of freshly grated nutmeg
- 4-6 slices of cheese (processed(Amul)/Cheddar/Leicester/Swiss)
- 8 slices of whole grain/whole wheat/white bread
- Butter to toast
- Saute 1 clove garlic with 1 tbsp butter + ½ Tbsp oil
- Add maida/all purpose flour and saute on low flame. Ensure there are no lumps
- Once the flour mixture bubbles a bit pour in milk and whisk till smooth
- Let the mixture thicken a bit
- Now add chopped blanched spinach or frozen chopped spinach
- Toss in corn kernels
- Coat corn and spinach with the white sauce
- Next add ground black pepper, freshly grated nutmeg
- Sprinkle salt as per your taste
- Mix till corn-spinach mixture thickens and becomes even
- Apply butter on bread slices and toast lightly
- Get the slices off the tawa/griddle. On toasted side, smear corn-spinach mixture evenly
- Place cheese slices all over. I have used cheddar in one pic and Swiss cheese in the other one from another time
- Now place another toasted slice onto the base
- Apply butter on top side
- Place sandwich back on grill/griddle/tawa and toast till cheese melts and outside turns golden
- Serve immediately. Enjoy the cheesy wonderful, creamy, corn spinach cheese sandwich
Use freshly grated nutmeg for that fresh flavour
Use any kind of cheese you have, that melts. You can even use grated cheese
Do not burn flour mixture, it should be sauteed till raw smell of flour disappears
Corn Spinach Cheese Sandwich Stepwise:

Mix till corn-spinach mixture thickens and becomes even
