Serves: 4 sandwiches
- 1 minced clove of garlic
- 1 Tbsp maida/all purpose flour
- 1 Tbsp butter
- ½ Tbsp olive oil/regular oil
- ½ Cup milk
- ½ Cup packed chopped blanched spinach/frozen chopped spinach
- ½ Cup sweet corn kernels
- Salt to taste
- ½ Tsp freshly ground black pepper
- A pinch of freshly grated nutmeg
- 4-6 slices of cheese (processed(Amul)/Cheddar/Leicester/Swiss)
- 8 slices of whole grain/whole wheat/white bread
- Butter to toast
- Saute 1 clove garlic with 1 tbsp butter + ½ Tbsp oil
- Add maida/all purpose flour and saute on low flame. Ensure there are no lumps
- Once the flour mixture bubbles a bit pour in milk and whisk till smooth
- Let the mixture thicken a bit
- Now add chopped blanched spinach or frozen chopped spinach
- Toss in corn kernels
- Coat corn and spinach with the white sauce
- Next add ground black pepper, freshly grated nutmeg
- Sprinkle salt as per your taste
- Mix till corn-spinach mixture thickens and becomes even
- Apply butter on bread slices and toast lightly
- Get the slices off the tawa/griddle. On toasted side, smear corn-spinach mixture evenly
- Place cheese slices all over. I have used cheddar in one pic and Swiss cheese in the other one from another time
- Now place another toasted slice onto the base
- Apply butter on top side
- Place sandwich back on grill/griddle/tawa and toast till cheese melts and outside turns golden
- Serve immediately. Enjoy the cheesy wonderful, creamy, corn spinach cheese sandwich
As mentioned earlier, you can use frozen or fresh spinach and corn
Use freshly grated nutmeg for that fresh flavour
Use any kind of cheese you have, that melts. You can even use grated cheese
Do not burn flour mixture, it should be sauteed till raw smell of flour disappears
