An all-in-one tasty dish is the Kolkata special kathi roll. Kathi rolls are wholesome, filling and delicious at the same time. Kathi rolls generally have some type of kebab and kathi rolls have evolved over the years. This aloo paneer kathi roll is perfect for lunch or dinner.
Kathi rolls are best for on the go, they really do pack a punch. Very flavoursome and the pudina chutney in this aloo paneer kathi roll makes all the difference. Soft paneer pieces in a chatpata aloo sabzi. Lemon juice and chaat masala adds all the tanginess along with the pudina chutney.
The filling is rolled into a roti or flatbread with other fixins like onions, sliced capsicum (bell pepper). After the chutney is smeared and the filling is added it is finished off with some cool yogurt and chopped coriander. Here I have made whole wheat rotis to make the rolls.
This is perfect for picnics or for packed lunch and is kid friendly. Just adjust the chutney and spiciness when serving kids. You can make kathi rolls with different types of fillings. - 1 big or 2 medium potatoes peeled, boiled and cooled
- ½ Tbsp oil
- ¼ Tsp jeera
- ¼ Tsp red chilli powder
- A pinch of hing
- ¼ Tsp turmeric
- ½ Tsp garam masala
- ½ Cup chopped onions
- 1 chopped clove of garlic
- ½" ginger
- 2 sliced spring onions
- ¼ Tsp sugar
- Salt to taste
- 12-15 small cubes of paneer
- Juice of half a lemon/lime
- ¼ Cup pudina chutney
- 2 Tsp chaat masala or as required
- ½ Cup sliced onions
- ¼ Cup sliced capsicum/bell pepper
- ¼ Cup sliced spring onions
- Little lemon/lime juice
- Whole wheat dough to make rotis
- ½ Cup yogurt or as required
- Let's start by making the filling, heat oil in a pan, add jeera and let it splutter, add hing
- Sprinkle red chilli powder, turmeric and garam masala
- Next add chopped onions and garlic and saute
- Add sliced spring onions till the raw smell disappears
- Sprinkle sugar and let onions soften
- Add the boiled, peeled and chopped potatoes
- Sprinkle salt to taste and mix well
- Throw in the paneer cubes and cover and cook for 2-3 minutes
- Squeeze lemon/lime juice and give a final mix, do not break the potatoes
- Keep this filling aside
- Next keep all the other ingredients ready chutney, chaat masala
- Slice onion, capsicum, spring onions and keep them ready
- Take a big ball of dough and roll into a big roti (bigger than a regular chapathi)
- Roast well with oil till golden spots appear
- Make all rotis and keep them ready
- Now we will assemble the kathi rolls, smear pudina chutney along the centre of a roti
- Carefully place some filling along this line
- Lay on a few slices of onion, spring onion and capsicum
- Spoon on some yogurt along the length of the filling
- Sprinkle chaat masala and squeeze little lemon/lime juice
- To roll the kathi rolls, bring one side of the roll and cover with other side, secure the roll at the base and cover with parchment paper
- Serve immediately and enjoy!
Try not to pile on a lot of filling, it will be difficult to roll
Add more paneer if you want or skip it, it can be optional
Aloo Paneer Kathi Roll Stepwise:

Slice onion, capsicum, spring onions and keep them ready
