A creamy banana vanilla custard with custard powder is my go to soothing dessert. I love this so much that I sometimes eat it for breakfast too. A little secret to let you in on, to make it breakfast’y I add some powdered oats and let it sit in the fridge overnight. Next morning, breakfast’s ready! Would you do that, I just love this luscious banana vanilla custard with custard powder.
Use fully ripe bananas to make banana vanilla custard with custard powder. It does make a lot of difference, all the sweetness just mixes well and custard tastes really good. To add to the richness I generally add some cashews and raisins, makes it even richer and luxurious.
You can make the custard yourself from scratch, someday I will post the recipe. Or you can use store-bought vanilla powder like in this recipe. This recipe gives you the steps to make a lump free custard. One more secret, keep stirring the custard while it’s cooling to prevent a skin forming on the surface.
Also try fruits and cream, baalehannu rasayana from FOI! Add vanilla ice cream to take it over the top, you know just to indulge a bit!
- 2 Tbsp vanilla custard powder
- 3 Tbsp + 2 Cups/500 Ml whole milk/full fat milk
- 2 Tbsp sugar
- 4-5 fully ripe bananas
- 2 Tbsp raisins
- 7-8 cashews
- In a small bowl, add custard powder
- Slowly whisk in milk and make a thick paste
- Mix sugar into the paste and mix well
- In a pan, scald/heat slowly the remaining milk
- Remove from heat
- Slowly pour the custard paste into the milk and whisk it well
- Keep whisking so that no lumps are formed
- Bring it back to heat
- Let it thicken
- The custard starts to coat the spoon, turn off heat and let it cool
- Wash, peel and dice ripe bananas
- Take chopped banana into a bowl
- Whisk the custard and remove the custard skin if it is formed, pour the custard over the bananas
- Next add raisins and chopped cashews
- Mix very well
- Chill in the refrigerator for atleast 2 hours
- Serve chilled with a cherry on top!
Adjust sugar as per your taste, or skip it altogether
Whole milk works best, skip the skimmed milk
