The temperatures are soaring and there are mangoes to make your life beautiful. Be it raw mangoes and sweet ripe mangoes, the dishes one can make are innumerable. So this time, FOI is back with raw mango jam or maavinakayi gulamb or aam ka murabba. This is a specialty of North Karnataka and Maharashtra region.
Raw mangoes are grated and simmered in sugar until a jammy consistency is achieved. Generally murabba is not overloaded with flavours, it is kept nice and simple. In the sweltering what if you feel like eating something cool and savoury with some carbohydrates. Then do try this pasta salad with a creamy sundried tomatoes dressing and loaded with some fun fixins. I have added cherry tomatoes, feta cheese and olives. But you can add anything of your choice, capers, deseeded diced cucumber, avocado etc.
For this pasta salad, I have used fusilli pasta (spiral shaped). However feel free to use any pasta suitable for a salad like penne, macaroni etc .The best part about this pasta salad is you can make this ahead of time. As a matter of fact, pasta salad should be made ahead of time for the flavours to develop. We often discard the leaves, seeds and peels of vegetables and fruits. There are some vegetables and fruits where the part should not be consumed (like apple seeds, tomato leaves or potato stalks) or is not edible like hard peels etc. But there is no reason why the seeds and peels cannot be consumed if they are edible. Mangalore southekayi beejada tambli is exactly the recipe which resonates the idea of using usually discarded element.
Mangalore cucumber or southekayi if it is tender, the seeds are very much edible or atleast the extract that comes out of it. So if you are making Mangalore southekayi huLi/sambar then store the seeds they can be used to make this Mangalore southekayi beejada tambli or saaru. The idea is to grind and extract the pulp and liquid out of the seeds. This liquid is then mixed with well beaten fresh yogurt. In Indian cuisine, turmeric plays a very important part. The bright yellow coloured root is usually available in the form of a powder which is used as a spice in cooking. ‘Curcumin’ the main nutrient in turmeric is a known anti-inflammatory agent. Turmeric root is also a very useful cooking ingredient, it can be used in soup broths, chutneys or in this turmeric ginger pickle (haldi adrak achar).
Turmeric ginger pickle is nothing but chopped raw turmeric and ginger root pickled with salt and lemon juice. I have added saunf here to give it a Gujarati tinge and it works very well in this turmeric ginger pickle. Always ensure to make pickles in a clean and dry environment. Humble and simple, mosaru avalakki, or dahi poha, Shri Krishna Janmashtami special

A must have dish, mosaru avalakki for Shri Krishna Janmashtami along with some some fresh butter churned up for ‘muddu’ (beloved) Shri Krishna. Fun snacks offered are such as kodubale, benne muruku, chakli, kobbri mithai, 7 Cups barfi, kalakand. But the most simple and humble dish required on the day is ‘mosaru avalakki’ or dahi poha.
You can choose to add some simple tadka/vaggarne ingredients to make it extra tasty. But in general you can even it keep it plain and quickly mix this up. After eating oily snacks a few spoonfuls of this mosaru avalakki is indeed cooling. The quality of a meal almost entirely depends on the side dishes and condiments that are served with it. They pretty much define your food! For a typical South Indian everyday lunch it will have saaru/rasams like menasina saaru (pepper rasam), carrot saaru and sambars like sorekayi kootu, Mangalore southekayi sambar.
