As I mentioned in my post, bharwa karela posted a few days back, karela and lauki are one the most used vegetables in India. They are staples, nutritious and healthy. But how do we disguise these vegetables in this age of fast food seeking people. A simple lauki sabzi or lauki dal will not sell and it will remain as cooked. Lauki thepla or paratha is one easy way to hide lauki and kids will love it! By the way, this is healthy recipe #5 in this series.
Knead usual chapathi dough with grated lauki and here I have added roasted ground groundnuts. It enriches the flavour and it goes very well with lauki. Lauki has a soft velvetty texture and groundnuts impart nuttiness and texture to these delicious lauki thepla. Looks like we are going to make it to the goal, healthy recipe #4 this month, in this new year! I love it when that happens, without overplanning you get to meet the goal. So here we are with one more no compromise on flavour yet healthy breakfast dish. Sabsige soppu kadubu or steamed rice flour dill leaves dumplings. Nice, easy and healthy and more importantly hearty!
The number of ingredients required are small and simple. All you need is to buy some fresh dill leaves, organic and homegrown even better. We first need to prepare a dough, then shape into kadubu and steam them. Mediterranean Platter 1

Mediterranean cuisine is a very vast cuisine. It covers various regions with a wide variety of dishes. Over the last few days I have posted recipes which are simple dips from the Mediterranean cuisine. These dips can be easily converted into a big party platter, forms a great starter with simple nibbles to munch on. The dips included Hummus, Roasted Red Pepper Hummus and Tzatziki. This platter is great for parties or potlucks. Very easy to prepare, easy to put it all together and is very portable. Nibbles and snacks can include very simple things like sliced avocado, pita chips and even tortilla chips (ok may be not Mediterranean but tastes awesome!). Other common things from the Mediterranean region like olives, some Greek Feta cheese (available in most supermarkets) all make up for great snacks on this platter. Include other things if you want to like slices of toasted pita bread, roasted aubergines etc. Restaurant quality dishes at home ready in few minutes. Easy on the stomach and on your pockets!
