Years ago when I first bought a jar of green chilli pickle home everyone had loved it. I always wanted to make green chilli pickle, so, here it is, a brand new spicy pickle recipe from FOI. The beautiful yellow mustard with fresh green chillies pickled with lime juice and a dash of vinegar, absolutely mouth watering.

Trail Mixes are always fun to eat. A traditional way of celebrating Sankranti/Pongal in Karnataka & Maharashtra is to make yellu-bella or til-gul. Sankranti yellu bella is a mixture of toasted sesame seeds and jaggery pieces. Apart from these ingredients which denote bitter-sweet flavours, roasted groundnuts, roasted gram and pieces of desiccated coconut are also added.

Spicy groundnut chutney powder, pre-made side dish

Having a side dish always on hand in the form of a dry powder and which does not spoil is very useful. Chutney Powders/Chutney Pudis are a great side dish for chapathis, rotis, dosas, idlis or even hot rice with ghee. Shenga chutney pudi (groundnut chutney powder) is a very famous side dish from North Karnataka. All households make large quantities of this tasty spicy powder and store it. Gooseberries are very rich in Vitamin C and dietary fibre. They are tart and tangy and also pulpy making a good berry for making jam/marmalade. Moreover they are available throughout the year in most places especially in tropical places. There are so many variety available, big lemon sized ones, small ones, soft ones and even red ones etc. I have used green soft gooseberries almost seedless, which are not very sour to make jam as given in recipe below. Homemade dosa batter for hotel style dosas

The secret to make crisp yet soft dosas without using a lot of oil is in the batter. Dosa batter should be fermented to the right consistency for good, tasty dosas. Different people make dosa batter in different ways, few add cooked rice, few add puffed rice and few add rice flakes (poha). I use poha which makes the dosas light and fenugreek (methi) seeds for fermentation and colour. There are few more secret ingredients revealed in below recipe. Look out for the notes mentioned in the recipe for important pointers.
This dosa batter is an all-rounder batter for making different variety dosas like masala dosa, benne masala(butter masala dosa), ghee masala dosa, open dosa, dosa uttapam and the list goes on. I use a heaped half cup measure(U.S 1/2 cup = 120 Ml) to measure out all ingredients, which will be sufficient to make dosas for 4 people. Thick hung curd/yogurt (dahi ka chakka in Marathi/Hindi) made from separating whey from curd or yogurt.
