As a kid I always used to buy different kinds of cold flavoured milks like kesar badam, pista, rose milk etc. These flavoured milks loaded with sugar and the cooling effect always used to soothe my gut and make me feel energetic. Nowadays neither can I buy those flavoured milks here nor do I want to consume a lot of sugar. So rose milk with sabja seeds was made for Ram Navami this year.
For this simple rose milk with sabja seeds I have used boiled and cooled milk. Basically heat the milk on low flame till it rises up, switch off the flame and allow it cool till room temperature. Then store in the refrigerator for atleast 2-3 hours till chilled. Use authentic rose water to make rose milk. These days I try to bake most things at home. But kneading the dough to make bread, buns or rolls takes some effort. Nevertheless it is worth the effort and so this time I wanted to try something a bit more fancy. So I tried a nutella braided bread which is basically bread dough filled with hazelnut chocolate spread. This is braided into a nice plait and then baked off till golden brown.
A hot cup of coffee and some ooey gooey nutella braided bread to go with it can set you right up. I know chocolate spreads are rich in calories but hey cannot hurt to make this once in a while. Herbs like mint, coriander, basil are very sensitive and clever. Sensitive because they cannot last very long and clever because they are very elusive, not available when required. In my case the herb is mint, I buy it sometimes thinking I would make chutney or pulao or chaats. Then I forget about it and it is somewhere stuck in the bottom of the vegetable drawer. My solution to using pudina/mint is making these flaky pudina dhania paratha.
This recipe can be quickly made with leftover chapathi/roti dough. Quickly chop up some fragrant mint leaves and here I have also added dhania/fresh coriander. Fancy looking pudina dhania paratha will be ready in a few minutes. All you need is a little patience to get the chapathis rolled out first, stuff them and then make the lacchha.
