Pea Mint Soup

To continue with healthy recipes this January in the new year, I decided to post a soup recipe. Soup definitely has a place in healthy recipes series. What better than a piping hot, smooth and velvetty pea mint soup. It is such as an easy to make soup, gets ready quickly and you do not have to go to any gourmet restaurant to get such flavours.
For this pea mint soup I have kept it very simple finishing with some fresh cream to give a smooth finish. But you can make white sauce or bechamel sauce and then proceed with making the soup. White sauce recipe for another day.

Here I have added Himalayan pink salt when making the pea mint soup. Use regular table salt, pink salt was not the selling point of this soup. Also blend the soup in a mixer jar but wait for it to cool or if you have a soup maker, great! Ensure mint leaves are fresh.
