Chilli Noodle Soup

The cure for a nose block or even a running nose, yes both, is a nice piping hot soup. I find my solace in a comforting chilli noodle soup loaded with ginger and garlic. A chilli noodle soup is so comforting just the thought of it starts clearing my senses. Adding a swirl of honey provides some much needed comfort to a sore throat.
Anyway do not restrict chilli noodle soup to just comfort you on a bad day. Slurp on this wonder chilli noodle soup on any rainy or cold winter evening. It surely will make you feel more energetic and cheerful. It is all about the balance of those flavours.


I have used udon noodles to make this soup but you can use any good brand of noodles or even rice noodles. Also I use low sodium soya sauce so it is easy to control the amount of salt that goes into the chilli noodle soup. Try more Indo-Chinese recipes from FOI

Ingredients
  • 1 Cup noodles
  • ¼ Cup diced celery
  • 1 fresh red chilli
  • 2 cloves of garlic
  • 1" ginger
  • ¼ Tsp black pepper
  • ½ Tbsp sugar
  • 1 Tsp vinegar
  • ½ Tbsp less salt soya sauce
  • 1 Tsp chilli oil
  • 1 Tsp honey
  • Coarse sea salt to taste
  • 1 Tbsp cornflour
  • Juice of ½ lime
Method
  1. In a blender or mixer jar, add diced celery and roughly chopped fresh red chilli
  2. Next add grated ginger, garlic
  3. Add black pepper, sugar
  4. Pour vinegar, soya sauce, chilli oil and honey
  5. Season with coarse sea salt as per your taste
  6. Squeeze in juice of ½ a lime
  7. Add cornstarch
  8. Add 2 Tbsp water and grind into a thick paste
  9. Boil noodles as per packet instructions
  10. Empty the ground paste into the noodles
  11. Give a quick boil
  12. Serve piping hot!
Notes
Use red chilli as per your preference, restrict to a small piece if you want less heat

This can be served without noodles also but gives a bit of body and is filling

Add spring onions instead of celery

Chilli Noodle Soup Stepwise:
In a blender or mixer jar, add diced celery and roughly chopped fresh red chilli
 
Next add grated ginger, garlic
 
Add black pepper, sugar
 
Pour vinegar, soya sauce, chilli oil and honey
   
Season with coarse sea salt as per your taste

Squeeze in juice of 1/2 a lime

Add cornstarch

Add 2 Tbsp water and grind into a thick paste

Boil noodles as per the packet instructions

Empty the ground paste into the noodles
 
Give a quick boil

Serve piping hot!
