Vegetable Stew in Coconut Milk

All things stewed, I love them, they are the ultimate comfort food. A simple vegetable stew in coconut milk is my go to recipe. Be it, as a side dish with neer dosa or with some plain or special jeera rice, this stew is my favourite. Some mixed vegetables like potato, carrot, beans and some soft green peas all stewed in a simple coconut milk based curry, ultimate!
Here I have used some simple whole garam masala like elaichi, laung, kali mirch and dalchini, all in very small amounts for a subtle fragrance. Vegetable stew in coconut milk surely does sound complicated and time consuming. But all it needs is a little preparation, chopping vegetables in my opinion is the biggest task in this recipe.


For vegetable stew in coconut milk I have used store bought organic coconut milk as I had run out of coconut to extract the milk. And sometimes I also use it for convenience! Creamy and delicious, with subtle yet fragrant vegetable stew in coconut milk

Ingredients
  • 1 Tbsp coconut oil
  • 1 elaichi/cardamom
  • 1-2 laung/cloves
  • 4-5 whole black peppercorn
  • ½" cinnamon/dalchini
  • 1 chopped green chilli
  • 1-2 finely chopped clove of garlic
  • ½" finely chopped ginger
  • 6-7 curry leaves
  • 1 sliced medium onion
  • 1 diced small potato
  • 5-6 finely chopped beans
  • 1 diced small carrot
  • ½ Cup peas/matar
  • ¼ Cup thick coconut milk
  • ½ Cup thin coconut milk
  • Salt to taste
  • Chopped coriander to garnish
Method
  1. In a pan, heat oil and add all whole garam masala, elaichi, laung, peppercorns, dalchini
  2. Next add garlic, ginger, green chilli and curry leaves, fry for a few seconds
  3. Add sliced onions and fry till onions turn soft
  4. Add finely chopped vegetables, potato, carrot and beans, let them cook
  5. Drop in peas/matar
  6. Add thick and thin coconut milk
  7. Mix well and add salt to taste
  8. Garnish with chopped coriander and mix well
  9. Serve with neer dosa or jeera rice
Notes
After adding the coconut milk do not boil the stew

You can par boil the vegetables or steam them before adding to the stew

Coconut oil adds a lot of flavour but feel free to use regular cooking oil

This recipe can be easily increased in proportion, doubled or tripled accordingly

Drop in peas/matar

Add thick and thin coconut milk

Mix well and add salt to taste
