Winter is almost over for many of us in the Northern hemisphere. But still the cold lingers on and one feels like eating something chatpata or crisp at tea time. What better than these crisp baalekayi bajji or raw banana fries/fritters. They are crisp, slightly chatpata and soft on the inside.
A simple batter made with besan and a little rice flour to render crispiness. Then a few simple masalas are added which add the right amount of seasoning. Thin slices of raw banana are dunked into the coating batter and deep fried in oil. Perfect as a snack for tea time, chatpata and spicy, Maharashtra special, kottambir vadi
11/08/2018 9:57:24 PM vindhyadesai
Tea-time snack recipes are a must, these snacks are not like everyday staple food items. You cannot get away by making rice, dal, saaru, roti, chapathi, sabzi/palya. Tea-time snacks need to have variety but they cannot be deep fried snacks always. Something that goes with your favourite masala chai is definitely kottambir vadi. I learnt this recipe from a magazine clipping I had saved.
Kottambir vadi is nothing but loads of coriander leaves mixed with different masalas and made into tikkis. The specialty about these kottambir vadi is they are steamed like idli first then roasted on a tawa till crisp. Crisp roasted mungphali/groundnuts add crunch to these Maharashtra special kottambir vadi. ... “Kottambir Vadi | Coriander Tikki | Snack Recipes”

Preparing droolworthy fresh biscuits and cookies at home is a very relaxing activity. Baking them fresh and eating a piece or two at tea time is a boon. The house will smell like a bakery and it can be a family activity. Involving kids too in the process of making biscuits and cookies teaches them teamwork and more importantly teaches them cooking . A childhood favourite is this homemade coconut biscuit.
Homemade coconut biscuit or kobbri biscuit was a common snack during childhood. Along with benne biscuit & khara biscuit, coconut biscuit used to be at home for an after school snack. Crisp and bright yellow coloured authentic Kerala special banana chips or plantain chips
08/14/2018 9:50:39 PM vindhyadesai
Crisp golden yellow hued banana chips mildly flavoured with coconut oil is a delicacy. Those perfectly fried chips have a sweet taste and the light pungency of coconut oil rounds up the flavours. Can I say that I like banana chips better than potato chips (may be not, I love them both!). I love making banana chips at home, it’s very quick and easy to make.
I generally don’t fry the entire lot in coconut oil (but please do if you want). I add a few drops of coconut oil for that unmistakable flavour in my banana chips. Ensure you have kept the frying pan with hot oil on the back burner, a sincere suggestion is to not do this with small children around. Although frying on medium heat will not splutter when turmeric solution is added, it’s good be precautious. ... “Banana Chips | Plantain Chips | Kerala Banana Chips | Snack Recipes”

Whatever the weather is, we all need a cup of our hot beverage, tea or coffee or milk. In childhood days, it was almost customary to have freshly baked goods once in a few weeks. We used to all wait for such days, freshly baked benne biscuit, fruity dil pasand, soft oozy honey cakes, hot & spicy aloo buns and nippattu! Of course Iyengar bakery khara biscuit was a regularly featured baked item from the bakery!
As I write this I can imagine those rainy days and taking in the fresh smells just after coming home from school. Oh, what joy! Iyengar bakery khara biscuit is a purely South Indian affair. Iyengar bakery khara biscuit (or simply khara biskuttu) is a mildly spicy biscuit with super tasty flavours from curry leaves & green chilli. ... “Iyengar Bakery Khara Biscuit | Khara Biscuit | Biscuit Recipes”

Favourite leftover rajma gravy made into delicious street style rajma sandwich
05/04/2018 11:44:55 AM vindhyadesai
Rajma masala was one of the first recipes I had posted 2 years ago when I started FOI. A super yummy gravy recipe that goes well with roti or chawal. Usually I tend to make extra rajma so I can eat it with both roti and chawal. But sometimes we do get bored of roti and chawal. The answer to that boredom is this street style rajma sandwich with leftover rajma masala.
Last year when I was travelling, in my flight lunch box I had rajma masala and some bread on the side. That’s where the idea of this street style rajma sandwich dawned upon me.
