Soft steamed bundles of fun, Ganesha’s favourite, ukkarisida modaka or ukadiche modak
08/30/2019 7:45:51 PM vindhyadesai
Ganesha Chaturthi is near and every food blogger puts in loads of efforts making and presenting different kinds of modak/modaka. I realised I do not have a single post of modaka in over 400+ recipes on FOI. Ganesha’s favourite modak/modaka has to be posted then, for this year’s festival falling on Monday, 2nd Sep of 2019. In my home, we always make everyone’s favourite, bele obbattu/holige. But today we will learn ukkarisida modaka or ukadiche modak.
Ukkarisida modaka or ukadiche modak are steamed modaka with a kayi-bella/coconut-jaggery hoorna/filling. The caramelized coconut-jaggery mixture along with the elaichi makes it very aromatic and flavourful. Now let’s talk about the outer layer, it is very important to get it right. It has a subtle taste and is made with rice flour made into a pliable dough. A pinch of salt is what adds the subtle flavour and seals the deal. ... “Ukkarisida Modaka | Ukadiche Modak | Modaka Recipes”
Light and fluffy avalakki idli, an easy instant breakfast recipe
07/07/2019 7:43:47 PM vindhyadesai
We all love to have those instant recipes up our sleeve isn’t it. Something that looks very complicated and time-consuming but actually only you know the trade secret. To have a hearty meal does not mean you need to spend hours in the kitchen to make it. On one such I chanced upon this light and fluffy avalakki idli recipe.
Avalakki idli or aval idli or poha idli is a very good instant recipe to learn and make. It has simple ingredients, mainly avalakki/poha of course. The avalakki/poha is soaked in water for 2-3 minutes and then to give it body we add idli rava or cream of rice which is readily available in departmental stores/supermarkets. To make the avalakki idli soft and fluffy we add some curd and a pinch of baking soda. ... “Avalakki Idli | Poha Idli | Aval Idli | Idli Recipes”

Soft and nutritious, loaded with fibre and taste, spinach oats rava idli
01/08/2019 10:19:44 PM vindhyadesai
A few months back, I ate a special type of idli with spinach at a restaurant. It was soft, delicious and had a creamy texture in the end. So immediately I had to try making idli with spinach. More importantly I wanted to make an instant version, so I made the base batter with rava/semolina. I have also added powdered oats to the batter making it extra fibrous and tasty. Try this spinach oats rava idli and you will love the texture and taste!
A few quick and easy steps are required to assemble the batter for this spinach oats rava idli. You can then steam the idlis and serve them with your favourite chutney and breakfast is served! You can also choose to serve with some masala yogurt or curd. Nice and simple! ... “Spinach Oats Rava Idli | Palak Idli | Idli Recipes”
Delicate and light, super flavoursome coconut idiyappam
12/04/2018 7:31:37 PM vindhyadesai
Delicate and light filled with coconut flavour, coconut idiyappam is very easy to make. It needs a little patience and you can serve some really fancy looking food in no time. I generally use good quality store-bought idiyappam flour, organic of course. But you can also use rice flour to make idiyappam, check the notes in the recipe card.
For coconut idiyappam it’s best to grind the coconut into a paste before adding to the flour. I skipped this as I was in a hurry but coconut can get stuck in the plate while pressing out the idiyappam. Ensure to season the idiyappam dough well or your coconut idiyappam will taste bland. ... “Coconut Idiyappam | Tengu Idiyappam | Breakfast Recipes”
Soft, healthy and makes for a delicious breakfast, lauki idli or sorekayi idli
11/20/2018 7:02:31 AM vindhyadesai
Idli is one of the best breakfasts ever to be invented on earth in my opinion. They are so light and fluffy and very nutritious. Adding more nutrition into your idlis, sounds good right? Lauki or bottlegourd or doodhi or sorekayi is a great vegetable. It has so much goodness, so incorporating this goodness into steamed idlis, it gets my thumbs up. Lauki idli is one of the best ways to feed fussy kids with some lauki.
All lauki idli needs is some preparation in the form of soaking some idli rice. Idli rice or fat grained rice is best for this recipe, you can get this type of rice in any Indian grocery store. I have also added some upma rava or sooji into the batter to make the idli light and to give it some extra texture. Lauki cannot be seen or detected in this idli and when you steam the lauki idli it brings a sweet aroma. ... “Lauki Idli | Sorekayi Idli | Idli Recipes”
Perfect as a snack for tea time, chatpata and spicy, Maharashtra special, kottambir vadi
11/08/2018 9:57:24 PM vindhyadesai
Tea-time snack recipes are a must, these snacks are not like everyday staple food items. You cannot get away by making rice, dal, saaru, roti, chapathi, sabzi/palya. Tea-time snacks need to have variety but they cannot be deep fried snacks always. Something that goes with your favourite masala chai is definitely kottambir vadi. I learnt this recipe from a magazine clipping I had saved.
Kottambir vadi is nothing but loads of coriander leaves mixed with different masalas and made into tikkis. The specialty about these kottambir vadi is they are steamed like idli first then roasted on a tawa till crisp. Crisp roasted mungphali/groundnuts add crunch to these Maharashtra special kottambir vadi. ... “Kottambir Vadi | Coriander Tikki | Snack Recipes”
