A bowlful of creamy potato corn chowder after a long day, perfect! Chowder is a type of soup made using vegetables or seafood in a cream based sauce. It has it origins in England. The sauce is creamy and smooth generally thickened with a roux. Corn chowder is one of the most comforting foods, sweet corn kernels popping inside the mouth with thick cream based soup and potato chunks in the background, it is a super combination. Season with lots of black pepper for a lot of flavour. Enjoy this on a rainy night or a dull winter evening with some dinner rolls or bread toast. I served it with homemade wholewheat rustic dinner rolls. ... “Potato Corn Chowder”

Quesadilla (pronounced: ‘kesa-Deeya’) is a famous dish from Mexico. They are made by stuffing tortillas with different types of fillings on the open side with cheese and roasted till cheese melts. The filled tortillas are folded into a semi-circle or half moon shape and served. Sometimes they are cut into quarters or 6s or 8s and they make a great starter dish for a party. There are many ways of making a quesadilla. It is really all about the different types of fillings. Fresh homemade tortillas are the best to hold the quesadilla together. Tortillas are like thin rotis without any oil, made using whole wheat flour or corn flour or white flour. Here, I have used fresh homemade whole wheat tortillas. Slowly caramelized onions taste sweet along with with some sweet red chillis. Quesadillas need patience while assembling, an easy way is to put together all ingredients, making them will then be a breeze. ... “Spinach Avocado Caramelized Onion Quesadilla”

When you are bored of eating rotis or chapathis a nice change would be to make parathas. The parathas that require filling like aloo paratha or gobhi paratha can be time consuming to prepare. Mixing some spices into a dough can enhance the flavour and one can probably get away with making only one side dish or just a raitha or chutney. Adding some grated vegetables like carrot or mooli(radish) makes rotis softer and tastier. I make carrot parathas quite regularly as carrots are rich in dietary fibre. It is important to mix the dough well and allow it to rest for a while before making them. Here’s the recipe with stepwise pictures. ... “Carrot Paratha”

Risotto is a creamy rice dish from Italy. Wine, butter are generally added to traditional risotto dishes. Here, I do not use any wine. It can be made with different kinds of vegetables, stocks. The rice grains used in a risotto are round short variety like Arborio rice. These days you will find them labelled as ‘Risotto Rice’ available in cartons in supermarkets. Risotto is a very comforting dish, it is easy to make but getting the right consistency is very important. Cooking on low flame and adding the broth/stock little by little are the keys to a perfect creamy risotto with rice cooked al-dente (to the tooth) ... “Spinach and Peas Risotto”

A bowl of piping hot tomato soup has to be one of the most popular dishes on a cold winter night. I make this very often and we gulp it down with croutons or grilled cheese (grin). Make this for an early evening supper/dinner or serve it along with a starter during lunch. This one is surely a crowd favourite and is bound to go down well amongst kids. There are so many variations of tomato soup. It comes in the form of powder, canned tomato soup, fresh soup sold in containers, tomato soup cubes, tomato soup in cartons and many more. Why not make fresh tomato soup at home. Easy available ingredients and very simple to make. I have tried many variations of tomato soup.
