Shahi Tukda | How to make quick shahi tukda?

Succulent pieces of toasted bread in sweet condensed milk rich with nuts and kesar
10/26/2016 9:18:34 PM vindhyadesai

Shahi Tukda is a famous dessert/sweet from the Mughlai cuisine. It is made using bread which is toasted lightly golden and reduced thick sweet condensed milk flavoured with elaichi and saffron is poured over these pieces. The pieces of bread absorb this decadent rich liquid and become succulent and flavourful.
This version is a quick one where bread pieces are not dunked in sugar syrup before thick milk sauce is poured over. Many recipes call for dipping toasted bread in sugar syrup to make it extra soft and moist. This will obviously make the dessert extra special. But if you are in a hurry, make this quick version.
Shahi tukda can be made ahead of time and tastes better as it chills in the refrigerator. Make this with a day’s old bread which increases its absorbing capacity. I have used homemade whole wheat bread for this recipe.
Serve this special sweet/dessert as part of your Deepavali/Diwali menu and indulge in some decadence. This sweet is truly fit for a king’s feast! Add these sweets to your list to choose from and make them this Deepavali! Why not try kalakand recipe? ... “Shahi Tukda | How to make quick shahi tukda?”

Carrot Halwa | How to make carrot halwa?

Juicy moist sweet carrot halwa with cashews and raisins
10/21/2016 6:45:02 PM vindhyadesai

Carrot halwa is a famous Indian sweet made from grated sweet carrots, sugar, milk, ghee all sauteed till it turns into a sweet, soft halwa. This light orange coloured sweet is loved by children and is a good way of getting children to eat some carrots. The halwa is flavoured with elaichi and along with added cashews and raisins this halwa is fit to be laid out for a feast.
This is one of those sweets where you do not have to check whether it is set or worry about making a threaded sugar syrup. The only thing to get this halwa to a soft and moist consistency is to stop sauteing it at the right time so that it is moist enough and does not dry out. The pictures below illustrate at what stage the halwa needs to stop cooking.
This will surely be a hit with everyone and is a good sweet to prepare in large quantities. It is easily portable and is a crowd pleaser. It can be served both as a sweet or dessert. Fancy it up a bit by serving with vanilla ice cream right on top. Do try more halwa and other sweet recipes from FOI.

Ice Cream Cake | Raspberry Swiss Roll Ice-cream Cake

Fun-filled, ice cream filled, decadent, indulgent ice cream cake
9/09/2016 7:22:33 PM vindhyadesai

Is it a cake, is it ice cream? As the name says, it is ice cream cake. Ice cream filled into a cake base and frozen back to solid. This is recipe number 100, a big milestone for Food Of Interest. Thank you to all those who have liked Food Of Interest and for trying out my recipes. It is my humble effort to try out and document Vegetarian/Vegan recipes from India and all over the world. This decadent, indulgent ice cream cake is adapted from Chef Lorraine Pascale‘s ‘Indulgent Ice Cream Cake’. It has a Swiss roll cake base (plain cake with layers of jam or marmalade all rolled into a tight roll) and vanilla ice cream filling. Use Swiss roll cake if you get it or try homemade one (recipe will be posted on FOI), or use regular Pound cake for the base. Layering a bowl with cling wrap is very essential for the cake to be inverted from the bowl and that resembles a half-spherical cake. More details in the recipe below. Please do share recipes from FOI, try them out and leave feedback on the website in ‘Comments’ section and don’t forget to ‘Rate’ the recipes on the website! 🙂 ... “Ice Cream Cake | Raspberry Swiss Roll Ice-cream Cake”

Apple Strudel – An Austrian speciality dessert

Flaky and crispy layers with juicy apples served with a homemade custard
08/20/2016 4:22:11 PM vindhyadesai

Thin puff pastry layers with crunch of sugar and juicy fragrant apples baked inside, served with custard and vanilla ice cream, sounds like a great combination for an indulgent dessert. This dessert is a speciality dish from Austria very famously made in one of its cities, Vienna. So here is Dish 6 from the World Cuisine Series from Austria. It is a pastry based dessert made with apples, puff pastry and other dry nuts. Strudel apparently is a word from German language. Traditionally, homemade strudel is a rolled pastry with fillings inside. The first time I tried it, I made it in the traditional way (few photos included from v1). The next time I tried it I made it into a cross between a French apple galette and an Austrian apple strudel, looks exotic and is super scrumptious. This is a very decadent dessert, go easy on the portions but enjoy it once in a while. ... “Apple Strudel – An Austrian speciality dessert”

Vanilla Ice cream | Eggless Vanilla Ice cream | No cook vanilla ice cream | Homemade vanilla ice cream

Super creamy homemade favourite eggless vanilla ice cream
08/09/2016 8:29:13 PM vindhyadesai

I have not met a single soul who does not like ice cream especially vanilla ice cream. It has to be one of the most eaten, desired and versatile desserts in the world. Make ice cream at home without worries of added preservatives, artificial flavours and colours. This recipe does not involve any cooking at all. There is no need of making a custard for this recipe. The most important thing is to keep all ingredients and your ice cream container chilled and cold at all times to prevent crystal formation and solidfication during churning/blending.
I have used my ice cream machine to churn the ice cream mixture. But it can be very easily churned with a simple everyday use electric hand blender which I will describe below. It is a little extra effort when using an electric blender but worth it nonetheless. I do not have to mention the uses of vanilla ice cream, it is super tasty just plain, or with chocolate brownies or simply whipped up into a milkshake like musk melon vanilla milkshake or this decadent peach and blueberry crumble. Oh boy! Super creamy vanilla ice cream! Enjoy! ... “Vanilla Ice cream | Eggless Vanilla Ice cream | No cook vanilla ice cream | Homemade vanilla ice cream”

Mango Kulfi | Aam Kulfi

Dreamy creamy mango kulfi flavoured with pista, elaichi and kesar
07/24/2016 12:46:39 PM vindhyadesai

The most preferred dessert when you are looking for an authentic traditional recipe. Mangoes and thick milk flavoured with elaichi, kesar and pista-badam that is a dream combination of ingredients. It used to be made using thick milk rabri/rabdi and adding flavours to it. As the recipe has evolved over the years, it is made with condensed milk, evaporated milk etc. The thick mixture is then frozen in matkas (earthernware pot) to make matka kulfis. Now, one can buy kulfi moulds from shops or even use glasses to freeze kulfis.
One of the mango dishes I made this summer. Enjoy creamy mango kulfis! Try out other mango recipes ... “Mango Kulfi | Aam Kulfi”

Seviyaan Kheer | Whole Wheat Seviyaan Kheer | Shavige Payasa | Vermicelli Kheer

Creamy and delicious seviyaan kheer with roasted dry nuts
07/14/2016 9:40:46 PM vindhyadesai

This is one of the most common sweets/desserts made in India for any festive occasion. For festivals, celebrations, weddings, functions, seviyaan kheer/shaavige kheer is a default option. It tastes good at room temperature or warm or even chilled. I have used whole wheat seviyaan (thin and long) and added less sugar. Add more sugar if you like and add more milk if you want the consistency to be thinner. Chopped dry nuts like almonds, pistachios, cashews and raisins add a wonderful aromatic flavour and crunch. I have dolled up my vermicelli kheer, it is one of my favourite desserts and I love it slightly chilled. ... “Seviyaan Kheer | Whole Wheat Seviyaan Kheer | Shavige Payasa | Vermicelli Kheer”

Chocolate Brownies

Rich chocolatey brownies with vanilla ice cream
07/06/2016 8:06:49 AM vindhyadesai

Cakes and brownies, who does not like them. Brownies can be eaten as a snack or an indulgent dessert served with vanilla ice cream. I have added bananas to this recipe and they give great flavour and moistness to brownies. Using only whole wheat flour will make brownies hard and chewy, I will add a recipe when I try out a good recipe and brownies turn out like brownies. ... “Chocolate Brownies”

Aam Shrikhand | Aamrkhand | Mango Shrikhand

Light, creamy mango and yogurt based dessert
05/29/2016 2:11:50 PM vindhyadesai

Aamrkhand or mango shrikhand or aam shrikhand is a mango and yogurt based no-cook dessert. It’s the mango season! Mango the king of all fruits makes this dessert very special. It is light and creamy and the mango flavours ooze through from the dessert. If the mangoes are sweet only a little sugar will be enough to cut through all the flavours. Saffron is added for enhanced flavour and gives a deep colour to shrikhand. Hung curd or yogurt separated from all the whey is used to make aamrkhand. I also love making kesar elaichi shrikhand. Aamrkhand is generally eaten with puris or just as dessert. ... “Aam Shrikhand | Aamrkhand | Mango Shrikhand”

Peach and Blueberry Crumble

Juicy fruits baked with a crumbly top served with vanilla icecream
04/24/2016 8:23:08 PM vindhyadesai

Crumble is a famous English dessert made from juicy fruits like peaches, plums, apricots, cherries, blueberries mixed with sugar. On top of these fruits a crumble topping made of flour, sugar and butter is added and baked off in an oven till crisp and golden. ‘Crisp’ is another variation of a crumble which generally has oats on top which crisp up when baking. This one is a delectable dessert and I am sure everyone will love it especially if it is served with vanilla icecream. Here I have used peaches and blueberries. Peaches are best in summer, flavourful and juicy. Peaches are like almond fruits, cherry fruit or plums. I love the crumble recipes from Ina Garten of Barefoot Contessa. ... “Peach and Blueberry Crumble”
