The quality of a meal almost entirely depends on the side dishes and condiments that are served with it. They pretty much define your food! For a typical South Indian everyday lunch it will have saaru/rasams like menasina saaru (pepper rasam), carrot saaru and sambars like sorekayi kootu, Mangalore southekayi sambar. Some sabudana happala to go with, yum!
Then there are side dishes like a palya and some saasme/raitha. Pickles and papads and happala must feature with these kind of dishes. We used to make happala and sandige at home every year during the summer holidays. A mango based lunch followed by making these happala and sandige used to be a big family affair. Back with another street food from FOI. This time it’s an Indo-Chinese dish, street style veg fried rice. Along with pav bhaji this used to be my favourite dishes to order in canteens near my college. A platter of gobhi manchurian to share with friends, the perfect combo! This time I made paneer manchurian to serve with veg fried rice. It also tastes delicious with veggies in hot gravy sauce. I have posted a few pictures below from another time.
For me the hit of this dish, veggies of course but it is freshly pounded black pepper which adds the distinct taste. It brings out the flavour of all the veggies and the slightly burnt taste gives it an unique flavour.

It is a fact that most people love chaats be it South or North India. Like so many varieties in different kinds of dishes all over India, chaats are also prepared and eaten in various ways. It is savoured by everyone and making it, in itself is a big celebration amongst many households. Even parties take place featuring chaat as the main theme. This sev puri chaat is a featured item on most menus.
Sev puri chaat has crisp papdis or flattened pani puri’ puris. Of course the main feature of any chaat is the sweet and spicy chutneys. They make chaats really tangy and all the lipsmacking goodness comes from there.
Sev puri chaat is then topped with boiled and roughly chopped potatoes. All the masala settles on this potato and the crunchy puri makes it the entire package. To finish off lots of sev and chopped coriander are added on top with dollops of thick sweet curd/yogurt if desired.
