Shenga Unde

Shenga unde are crunchy groundnut/peanut sweet balls. They are the most commonly made sweet snack in North Karnataka. Fast and very easy to make with just 3 ingredients. They are made of jaggery (palm sugar) and roasted groundnuts. A good snack for kids.
A very famous sweet recipe from North Karnataka and a must have during Sankranti/Pongal.

Crunchy groundnut/peanut sweet balls

Ingredients
  • 1 cup groundnuts/peanuts
  • ¾ cup grated/softened jaggery
  • 2 tbsp ghee/clarified butter
Method
  1. Roast the groundnuts. Roast them till they release their nutty aroma and are lightly coloured on their skin
  2. Peel off the skins from some groundnuts by rubbing the roasted groundnuts. Blow off the loosened skins
  3. Coarsely grind the groundnuts and put it in a bowl
  4. Add grated jaggery to the ground groundnuts
  5. Add the ghee/clarified butter
  6. Mix well till all 3 ingredients are well combined
  7. Gather some mixture together into you palm and start making balls. Press them a little and shape them into balls
  8. Make balls out of the remaining mixture and store them in an airtight container
Notes
Add more ghee/clarified butter if the mixture feels dry

Use any kind of groundnut/peanut you have. Make sure they are unsalted
