Creamy, pearly, suitable for fasting sabudana kheer

Ingredients
  • ¼ Cup sabudana
  • 1 Cup milk
  • 3-4 Tbsp sugar
  • 2-3 powdered elaichi
  • Few strands of saffron/kesari (optional)
  • Few chopped cashews (optional)
  • 2 Tbsp raisins (optional)
Method
  1. Take sabudana in a bowl
  2. Next sabudana pearls need to be washed in water till it runs clear
  3. Soak sabudana in water(nearly 2 cups) for half an hour. They will turn soft
  4. Boil in same water till sabudana turn translucent
  5. Next add 1 cup milk, mix well
  6. Add sugar (3-4 tbsp) and mix well
  7. Sprinkle elaichi powder and mix well
  8. Few saffron/kesari strands can go in
  9. Switch off flame, add chopped cashews, add raisins
  10. Serve warm or chilled
Notes
Adjust consistency by adding more milk. It thickens as it sits because of the nature of sabudana

Sweetness of sabudana kheer can also be adjusted. Add 1 more Tbsp of sugar if you prefer it sweeter

Make it with cashew milk if you want it be vegan
