To continue with healthy recipes this January in the new year, I decided to post a soup recipe. Soup definitely has a place in healthy recipes series. What better than a piping hot, smooth and velvetty pea mint soup. It is such as an easy to make soup, gets ready quickly and you do not have to go to any gourmet restaurant to get such flavours.
For this pea mint soup I have kept it very simple finishing with some fresh cream to give a smooth finish. But you can make white sauce or bechamel sauce and then proceed with making the soup. White sauce recipe for another day.
Here I have added Himalayan pink salt when making the pea mint soup. Use regular table salt, pink salt was not the selling point of this soup. Also blend the soup in a mixer jar but wait for it to cool or if you have a soup maker, great! Ensure mint leaves are fresh. - 1 Cup frozen/fresh peas
- ½ Cup finely chopped mint
- 2 Tbsp olive oil
- 2 finely chopped shallots
- 1-2 finely chopped cloves of garlic
- ½ Tsp pounded black pepper
- Salt to taste
- 1 Tsp butter
- 2 Tbsp fresh cream
- In a pan, heat oil, sweat shallots, garlic and mint leaves
- Cover and cook for 2 minutes on low flame
- Add peas and mix well
- Pour 1 to 1½ Cups water
- Let it cook and simmer
- Blend into a soup with a hand blender till smooth
- Season with salt and pepper
- Add little butter for smoothness
- Let it simmer and thicken for 2-3 minutes
- Finish with fresh cream!
- Serve piping hot!
Blend in a blender or mixie after cooling the mixture or in soup maker according to the instructions of your machine
Pour water carefully, you do not want a watery green soup!
Pea Mint Soup Stepwise:
In a pan, heat oil, sweat shallots, garlic and mint leaves
Cover and cook for 2 minutes on low flame
Add peas and mix well
Pour 1 to 1 1/2 Cups water
Let it cook and simmer
Blend into a soup with a hand blender till smooth
Season with salt and pepper
Add little butter for smoothness
Let it simmer and thicken for 2-3 minutes
Finish with fresh cream!
Serve piping hot!
