Recipes like cheela are simple yet they make your breakfast really hearty. Palak besan cheela is one of my favourites I started making in recent times.It is rich in protein and fibre, and what do I say about the flavour. Moreover it is instant and makes a quick breakfast.
Some simple spices like ajwain and jeera go into this cheela recipe and it makes the palak besan cheela simply great in taste. It is definitely a kid-friendly recipe, a palak besan cheela just before school and they are set to attend the classes! Just skip green chilli for younger kids.


Make sure the palak is fresh and crisp, just wash the leaves and chop them up and they are ready to be used. Palak besan cheela can be served with pudina chutney or ghee. Some tomato ketchup will also do! Ingredients
  • 3-4 Cups of chopped palak/spinach
  • ⅔ Cup besan/kadale hittu
  • ½ Cup rice flour
  • 1 Tsp jeera
  • ½ Tsp ajwain
  • ½ Tsp red chilli powder
  • ¼ Tsp turmeric
  • 2 shallots chopped
  • Salt to taste
  • 1-2 Tsp sugar
  • 1 Tsp amchur powder
  • ¼ Tsp pounded black pepper
  • 1" grated ginger
  • 2 chopped green chillies
  • 1 Cup water
Method
  1. Take the besan in a bowl
  2. Along with it add rice flour and give it a quick mix
  3. Add salt to taste
  4. Next add all spices and masalas, red chilli powder, turmeric, ajwain, jeera, black pepper powder and green chilli
  5. Add chopped shallots and mix well
  6. Wash and chop the spinach
  7. Add spinach into the besan mixture
  8. Mix till palak is coated with dry mixture
  9. Sprinkle amchur powder
  10. Pour water little by little and mix well
  11. Adjust consistency, it should be thick yet pourable
  12. Let it rest for 10-15 minutes
  13. Heat a tawa, and spread cheela into a dosa, it will slightly thick but it spreads quite well
  14. Spread some oil and cover and cook on medium flame
  15. When the underside is cooked, flip and roast on the other side
  16. After it is cooked completely, cheela is ready to serve
  17. Serve with chutney or ghee!
Notes
Resting the batter is very important, you can spread the cheela very well

Adding lots of palak is very important, this is the cheela!

Sieve the flours if you want, ensure besan is fresh and aromatic

Add a spoon of yogurt/curd for more tanginess and makes the cheela even more lighter

Palak Besan Cheela Stepwise:
Take the besan in a bowl

Along with it add rice flour and give it a quick mix

Add salt to taste

Next add all spices and masalas, red chilli powder, turmeric, ajwain, jeera, black pepper powder and green chilli

Add chopped shallots and mix well

Wash and chop the spinach

Add spinach into the besan mixture

Mix till palak is coated with dry mixture

Sprinkle amchur powder

Pour water little by little and mix well
