Kadhi (paladya) and saaru (rasam) work well in all seasons. I can never say no to a meal involving either of these 2 dishes. It gives you an instant feeling of warmth. Methi kadhi is one of my go-to dishes if I have methi in my fridge and after a long day of work. It is so quick to make and methi definitely makes it extra comforting.
This is Rajasthani style methi kadhi whereas Punjabi style methi kadhi generally has pakodas in it. I have already posted Gujarathi kadhi and Karnataka special majjige huLi. Oh, wow so many combinations and so much variety, it’s mind boggling sometimes. For a quick dinner, rustle up some quick jeera rice or peas pulao, and methi kadhi. Serve with pickle and papad. When summer holidays used to arrive we used to always have besan ladoo, avalakki chivda and kodubale at home. My mother always ensured she stocked up on these favourite North Karnataka snacks. Besan ladoo and avalakki chivda are infact the 2 most important snacks in a North Karnataka household. When you visit someone’s house you are sure to be offered these snacks. A cup of fresh chai and guests are served!
The trick to make fragrant and non-pasty/non-dry besan ladoo is patience. Yes you heard me right, you have to fry the mixture on low flame for quite sometime to get the right consistency, colour and taste! I mention it multiple times throughout this post, never ever be tempted to increase the heat on your pan, the mixture will turn into a clay like colour (ew!).

While choosing cauliflower ensure it does not look yellow or does not have brown spots. It should be firm and white and make sure to check in between the stalks for any small worms or impurities. If gobhi is groown organically even better. Your gobhi matar sabzi will be fresh and tasty. This sabzi can be made for lunch box or for a simple weekend lunch. Blanching cauliflower florets in boiling water will also get rid of impurities. Ragi or finger millet is such an underrated grain. In Southern parts of Karnataka, Mandya, Mysore and to certain extent Bangalore ragi is grown and used extensively. It is so light on the stomach and gives your strength. It’s farmer’s food, gives them the essential nutrients and keeps them full while they are working away in the field. Hittu or ragi mudde (ragi ball) is a very famous dish made in Karnataka. Ragi roti is another one, thin and mildly spiced rotis made from ragi.
Ragi roti is generally eaten with chutney pudi or chutney, a few onion slices and some yogurt. What a combination, simple dish for a simple living! Grated coconut added to the ragi roti makes them soft and retains good moisture.
