Timepass, timepass, timepass! As summer holiday season is peaking and holidays from schools means making more fun things to eat. Especially during the match season we all need that ‘fun fix’. So here we are, providing a simple idea with a Mexican classic, nachos nirvana!
Nachos nirvana, I am not sure how the name has come up but I tried this at a restaurant a couple of years ago. Basically all this is, is a layer of nachos topped with your favourite toppings and baked till the cheese melts. Serve immediately, this is a fun to eat, tear n share fun snack!
I have not given the recipes of tomato salsa and refried beans here. I will add them soon but it should be simple to make. It’s basically an idea, make it your own! Try more Mexican recipes, corn bread, tortilla pockets, breakfast polenta, black bean burger. Why not top your nachos nirvana with guacamole or enchilada sauce!
- 1 packet or as required organic nachos
- ½ Cup refried beans
- ½ Cup tomato salsa
- 1 peeled and diced avocado
- ¼ Cup grated cheese
- ¼ Cup boiled sweet corn
- Black pepper to season
- Salt to taste
- Few sliced pickled jalapenos
- In a small pan, add boiled corn, season with salt and pepper, keep aside
- In a deep baking tray, add a layer of nachos
- Add heated up refried beans
- Dot with sweet corn all over
- Next spoon some tomato salsa
- Place a few avocado pieces
- Sprinkle grated cheese and jalapenos
- Repeat layers one more time
- Bake for 5 mins in pre-heated oven at 180 Deg C
- Serve immediately with sour cream and lemon wedges!
Adjust the toppings as per your choice
You can also add nacho cheese sauce, black beans, coriander relish etc
Nachos Nirvana Stepwise:
In a small pan, add boiled corn, season with salt and pepper, keep aside
In a deep baking tray, add a layer of nachos
Add heated up refried beans
Dot with sweet corn all over
Next spoon some tomato salsa
Place a few avocado pieces
Sprinkle grated cheese and jalapenos
Repeat layers one more time

Serve immediately with sour cream and lemon wedges!
