Mixed vegetable enchiladas

Enchiladas is a Mexican tortilla based dish. Tortillas covered with sauce, finished off with cheese and baked in the oven till cheese melts. This is very hearty and filling, spicy and cheese’y and how can that not taste good! I have used leftover Mexican mixed bean veg chilli which I have posted earlier. Any kind of tortillas can be used, corn, whole wheat, plain tortillas, anything you like. I have also used hung yogurt to make the filling for the tortillas instead of sour cream to cut the calories. I have also used sliced avocado for the filling but you can use boiled corn, olives, onions, tomatoes, anything you like. This is one of those dishes you can make it your own. Ingredients
Method
  1. In a bowl, add hung yogurt and lightly whisk it
  2. Add black pepper powder, cayenne pepper, cumin powder
  3. Chop jalapenos finely and add to yogurt
  4. Add chopped coriander and mix well. This is the filling, keep aside
  5. Peel and slice avocado. Detailed method available here
  6. To assemble enchiladas, place tortillas on working surface separately. Add a dollop of yogurt filling onto each tortilla. Spread the filling evenly
  7. Place slices of avocado and add some grated cheese
  8. Pre-heat oven to 180 Deg C. Roll into tight roll and place in a baking dish. Repeat this for other tortillas
  9. Spoon in mixed vegetable chilli and spread all over. Use as much as you like but make sure to cover the surface
  10. Top with grated cheese all over
  11. Prepare other dishes in similar way
  12. Bake in pre-heated oven at 180 Deg C for 8-10 minutes or till the cheese melts
  13. Serve immediately with tortilla chips and slices of avocado on the side. Add a dollop of yogurt filling if you like
Notes
*Use red chilli powder instead of cayenne pepper if you want

Use any kind of melting cheese you like cheddar, pepper-jack, processed cheese like Amul etc

Use sour cream if you want instead of yogurt if you want

Use any kind of tortilla you like, corn, whole wheat, plain, chilli flavoured. Use store bought ones if you want, here I have used homemade whole wheat tortillas

 Stepwise:
