Sweets made of any kind of nuts or any milk sweets are considered special and rich. Indeed they are, special and rich and made on occasions like Holi, Deepavali or marriages. Kaju pista rolls definitely fall into that category. They are rich and nutty and a sure shot favourite amongst kids and adults.
Making kaju pista rolls involves a few steps but they do not require a lot of ingredients. Once you get the consistency right, making kaju pista rolls will then be a matter of just rolling them up 🙂 Nuts within nuts, who will not like them, these are fun to eat.
Do keep a count, or you may end up eating a few kaju pista rolls in one go, very addictive. But not to worry, even a piece or 2 of these will satiate your craving for nutty kaju pista rolls. The most important step is get the correct consistency of sugar syrup. Follow the steps carefully and you can savour these rich sweets, kaju pista rolls. Try more special sweets from FOI:

- 1 Cup cashews
- ½ Cup sugar
- ¼ Cup water
- 1-2 Tsp milk
- ½ Cup pista
- 2 Tbsp powdered sugar
- Few drops natural green food colour (optional)
- 1-2 powdered elaichi
- Ghee to grease
- 1-2 Tsp water
- Add water and sugar to a pan and turn on heat
- Let it come to a boil
- Let it boil till it reaches one string consistency
- Powder cashews by pulsing it a few times
- Add cashew powder to sugar syrup and mix well
- On low flame keep mixing till it gathers into a lump/dough
- Turn off heat, let it cool
- To make filling, powder pista by pulsing a few times
- Add powdered sugar and mix well
- Add green food colour and powdered elaichi if preferred
- Next add 1 or 2 drops of water and make a nice dough
- Once cashew dough has cooled, knead into dough
- Add 1 or 2 Tsp milk and knead well
- Place in between 2 sheets of parchment and roll into a thin circle
- Cut the kaju sheet in half and also the pista dough in half
- Place ½ a log of pista dough
- Roll into thinner log
- Cut into small rolls and trim the edges if preferred
- Kaju pista rolls are ready
Do not over knead kaju dough, knead enough to be able to roll
Ensure sugar syrup reaches 1 string consistency before adding powdered kaju
Lastly, when making pista dough filling, make sure not to add lot of water, just add a few drops to make the dough
Kaju Pista Rolls Stepwise:
Add water and sugar to a pan and turn on heat
