Serves: 1 or 2 roasted bell pepper
Ingredients
- Any kind of bell pepper - 1 or 2
- Few drops of olive oil
- Salt to sprinkle
Method
- Pre-heat oven to 200 C for 10 minutes
- Take a nice firm bell pepper. Wash it and dry wipe it
- Cut into half and remove the seeds and top. Quarter the bell pepper
- Place the quartered red bell peppers onto a sheet pan lined with foil
- Drizzle olive oil and sprinkle salt on the bell peppers
- Roast in oven for 20 minutes turning them once in between
- When their skins are lightly black and charred, peel their skins off and cut into thick slices
- Use them or store them refrigerated for a couple of days
- Use them for sandwiches, roasted bell pepper hummus, aioli or any dish you like

Use any kind of bell pepper, green, orange, red or yellow
Plunge the bell peppers in ice water for easy removal of their blackened charred skin
