For all the effort that goes into making dosa batter it is a mega base recipe. Making a huge batch of dosa batter enables you to make crisp hot masala dosa, plain dosa or this hotel style open dosa.
Hotel style open dosa is a tasty dosa variety found in many darshinis across Bangalore-Mysore. You know exactly what’s in your dosa or should I say ‘on’ your dosa.
A super specialty dosa recipe from the alleys of Bangalore-Mysore. Very tasty and lip-smacking with a layer of chutney powder, a big spoon of aloo palya, a dollop of butter and topped with freshly grated coconut. Certainly worth the effort!
When I make dosa batter I plan at least 2 kinds of dosas with it. Makes for a great weekend breakfast. Try other dosas from FOI, set dosa, masala dosa, khaali dosa. Other special variety dosas like neer dosa, majjige dosa, sorekayi dosa. For instant variety try heerekayi dosa and onion rava dosa. A plethora of dosa recipes, more choice, the better! - Dosa Batter as required
- Oil to roast dosas
- Aloo Palya (see masala dosa recipe)
- Chutney Powder/pudi as per your taste
- Freshly grated coconut as required
- Chopped coriander
- Soft butter to serve
- Make dosas, do not spread it very thin for open dosa it should be medium. Cover and cook
- Once underside is roasted, flip and roast on other side as well. Apply oil as required
- Sprinkle chutney powder as per your taste. Place a big spoon of aloo palya in the centre
- Next, sprinkle chopped coriander and grated coconut
- Add a big dollop of butter on top. Serve hot!
Adjust chutney powder as per your taste, skip if serving kids
Butter is a must but feel free to skip if you must 🙂
Hotel Style Open Dosa Stepwise:
Make dosas, do not spread it very thin for open dosa it should be medium. Cover and cook
Once underside is roasted, flip and roast on other side as well. Apply oil as required
Sprinkle chutney powder as per your taste. Place a big spoon of aloo palya in the centre
Next, sprinkle chopped coriander and grated coconut
Add a big dollop of butter on top. Serve hot!
