What pav bhaji is to Mumbai, what masala puri is to Bangalore, what golgappas are to Delhi, girmitt is to North Karnataka. A very popular street style dish in most parts of North Karnataka region.
It is less known outside the region but is super tasty and is the perfect street food snack. It is very similar to bhel puri. Along with hasi (wet) ingredients like onions, tomatoes it also has bisi (hot) masala. It is a mixture of sliced onions cooked till soft with chillies and aromatic curry leaves.

This masala adds the distinct taste to Girmitt. The soft onions and garlic along with sweet chutney adds the perfect balance of flavours. Roasted groundnuts and thin sev topped on girmitt add crunch! Yum!
Try this special dish, it is a delicacy! Tastes best with lightly pan fried green chillies. Make this less known dish famous and spread the joy of cooking and eating.

Yummy, lip-smacking, drool worthy spicy street food from North Karnataka - Girmitt - a specialty

Ingredients
For Masala:
  • 2 Tbsp oil
  • ½ Tsp mustard
  • 1 pinch hing
  • 1 finely chopped green chilli
  • 7-8 curry leaves
  • 2 sliced garlic cloves
  • 1 sliced onion
  • ¼ Cup water
  • 1 Tbsp puthani/fried gram/huri gadale powder(see 1 st step)
  • 2 Tsp sweet chutney or tamarind paste
  • ¼ Tsp turmeric powder
  • 1 Tsp sugar
  • ½ Tsp or salt to taste
Other Ingredients:
  • 1 finely chopped onion
  • 1 finely chopped tomato
  • Thin sev as needed
  • Finely chopped coriander
  • 2 Tbsp puthani/fried gram/huri gadale powder(see 1st step)
  • 1-2 Tbsp Groundnut chutney powder/Shenga chutney pudi
  • Roasted shenga/groundnuts as required
  • Lemon/lime juice
  • 3-4 Cups puffed rice or as required
  • Fried green chilli (slit, deseeded and white membranes removed)
Method
  1. To make fried gram powder, take about ¼ heaped cup of fried gram/puthani and blitz for 3-4 seconds till you can see powder
  2. Roast groundnuts without any oil till crisp and their skin changes colour
  3. To pan fry green chillies, slit them, deseed them and remove white membranes to reduce their heat. Fry them till their skin changes colour in little oil
  4. Now make tadka/vaggarne with mustard, hing, green chilli, curry leaves
  5. Next add sliced garlic, saute, add sliced onions and saute
  6. Add sugar and salt. Let it saute till nice and golden. Sprinkle in turmeric. Add sweet chutney and mix well
  7. Pour about a ¼ Cup of water and mix well
  8. Once water is mixed well, add in puthani powder and mix well. The mixture starts to thicken. Turn off heat and let it cool for a bit
  9. To assemble girmitt, add 2 Cups puffed rice into a deep vessel
  10. Add 2 Tbsp of prepared girmitt masala, mix well
  11. Sprinkle in ½ Tbsp puthani powder and 1 Tsp shenga chutney powder, mix well
  12. Add 1 Tbsp girmitt masala again. Mix
  13. Now add chopped onions, tomatoes and mix well
  14. Add this onto a plate
  15. Top with chopped onions, tomatoes, sev, coriander, lemon juice, shenga and serve with fried green chilli
  16. Enjoy this lip-smacking dish, street style but homemade
Notes
Add shenga chutney powder as much as you like. Similarly with other toppings like onions and tomatoes. There need not be any measurement, add according to your taste

If you do not have sweet chutney substitute with tamarind paste and throw in a small piece of jaggery

Girmitt Stepwise:
To make fried gram powder, take about 1/4 heaped cup of fried gram/puthani and blitz for 3-4 seconds till you can see powder

Add sweet chutney and mix well

Sprinkle in 1/2 Tbsp puthani powder and 1 Tsp shenga chutney powder, mix well
