Garlic Spaghetti

From the land of Italy comes a very simple pasta dish called “Spaghetti Aglio e Olio” which means spaghetti in garlic and oil. This dish is super quick and easy to make. It is one of those quick fix dinners that I make sometimes after a long day or sometimes when I just have only a bunch of garlic and no other vegetable. This can be served with garlic bread or just some toasted bread or even just on its own. I have used whole wheat spaghetti here but durum wheat spaghetti can also be used, anything that you can get your hands on. This pasta dish can also be made with thin spaghetti, angel hair pasta or any other kind of pasta you like. Enjoy the benefits of garlic with this easy dish. Simple, aromatic and tasty! Ingredients
  • 75-80~ Gm or 2 handfuls whole wheat spaghetti
  • 1 Tbsp or 2-3 cloves finely chopped garlic
  • 3 Tbsp extra virgin olive oil
  • ½ Tsp garlic salt (optional)
  • 1 pinch smoked paprika or red chilli flakes (optional)
  • ½ Tsp ground black pepper
  • Salt to taste
  • 2 Tbsp chopped parsley
  • ¼ Cup grated parmesan cheese
Method
  1. Boil spaghetti till al dente. Cook as per instuctions on the packet (till just done, to the tooth)
  2. When pasta is boiling, add chopped garlic to extra virgin olive oil in a pan. Saute on low flame
  3. Drain pasta and set aside for a few seconds
  4. To the garlic infused olive oil, add the boiled and drained pasta. Mix well
  5. Add garlic salt, smoked paprika and salt to taste
  6. Add ground black pepper. Toss everything together
  7. Add chopped parsley and mix well
  8. Add grated parmesan and serve hot!
Notes
Add regular olive oil if extra virgin is not available

Add garlic to cold oil and then heat both together. This serves 2 purposes, garlic does not burn and oil gets infused with sweet garlic smell

Add freshly ground black pepper

Skip parmesan cheese to make the pasta vegan and use any hard vegan cheese if available

Stepwise:
