Who does not love dosas! I am a big fan of finding new ways of making dosas to bring in variety. So many textures, so many flavours all in a dosa. Soft, lacy, crispy, with filling, without filling, thick or thin, find them all in a dosa! You can make it simple and humble or grand and elaborate. So this time I have come back with a soft lacy dosa recipe ganji dosa or kalikanji dosa I learnt from a magazine.
Ganji dosa or kalikanji dosa is made with a simple rice batter. The most important thing about ganji dosa or kalikanji dosa is the rice does not require a lot of time to soak. Just soak it for a couple of hours. Then the rice is ground with little coconut and some batter is boiled into a ganji (rice porridge). This ganji is poured into the batter after it cools down making it ganji dosa or kalikanji dosa.
So soak the rice as soon as you wake up . Make delicious ganji dosa or kalikanji dosa in time for breakfast. No fermentation required and it is almost an instant dosa. Sure, a little preparation is required but hey we can eat some soft lacy dosas! Ganji dosa is like neer dosa but which does not require a lot of coconut. Kids will absolutely love this dosa as well. - 1 Cup regular/sona masuri rice
- 2 Tbsp coconut
- Salt to taste
- 1 Tsp coconut oil
- Water to grind batter
- Add the rice into a bowl
- Wash the rice twice and drain all water
- Pour fresh water and let it soak for 2 hours
- After 2 hours, again drain all water and add the soaked rice into a mixie jar
- Add salt to taste
- Next add grated coconut and pour water to grind
- Grind into a batter, it should not be very thick but pourable
- Add the batter into a bowl
- Pour ½ Cup water into emptied mixie jar and add this to a vessel/pan
- Take 1 ladleful of ground batter and mix with the water
- Bring this to heat
- Add a Tsp of coconut oil
- Mix well and it starts to thicken
- Keep stirring all the time to avoid lumps
- Once it cooks and thickens slightly remove from heat, let it cool
- Mix this with remaining batter
- Now on heated tawa, pour a ladleful and spread into a dosa
- Cover the dosa and cook on low-medium flame
- Lacy ganji dosa is ready to savour!
Keep the mixture on low flame to avoid the mixture from sticking to the bottom of the vessel/pan
You can also add little more coconut if you want to but the ganji is enough to make the dosa light and lacy!
Ganji Dosa Stepwise:
Add the rice into a bowl
Wash the rice twice and drain all water
Pour fresh water and let it soak for 2 hours
After 2 hours, again drain all water and add the soaked rice into a mixie jar
Add salt to taste
Next add grated coconut and pour water to grind
Grind into a batter, it should not be very thick but pourable
Add the batter into a bowl
Pour 1/2 Cup water into emptied mixie jar and add this to a vessel/pan
Take 1 ladleful of ground batter and mix with the water
Bring this to heat
Add a Tsp of coconut oil
Mix well and it starts to thicken
Keep stirring all the time to avoid lumps
Once it cooks and thickens slightly remove from heat, let it cool
Mix this with remaining batter
Now on heated tawa, pour a ladleful and spread into a dosa
Cover the dosa and cook on low-medium flame
Lacy ganji dosa is ready to savour!
