To open the pizza recipes account on FOI, I would like to post an unusual pizza recipe generally not available to order online. Just ripe, heart shaped slices of figs (anjeer), creamy goats cheese (can be substituted with mozzarella or pizza cheese), sweet caramelized onions and crisp arugula also known as rocket leaves (can be substituted with basil or any light salad leaf if rocket leaves are not available) are the toppings in this recipe.
Substitute ingredients depending on their availabilities. These are a super combination, this is infact a classic recipe of pizza. Goats cheese and figs are the new ‘jodi’ like bread & butter or cheese & grapes. Adding figs do not make the pizza sweet or fruity, they lend a beautiful flavour with the onions because they caramelize really well. Goats cheese is a soft cheese which does not melt. I have used homemade onion marmalade(jam) for this recipe as the base sauce, it can be substituted with a slightly less sweet jam or even tomato sauce or ketchup.
- 1 recipe of pizza base (whole wheat or regular)
- 2 sliced medium sized red onions
- 1 minced clove of garlic
- 1 Tbsp olive oil
- 7-8 crushed black pepper
- A pinch of salt
- 4 Tbsp onion marmalade/jam
- ¼ Cup grated parmesan (vegetarian cheese)
- 75-100 Gm goats cheese
- 3-4 just ripe figs
- A bunch of rocket leaves/arugula
- Pre-heat oven to 220 Deg C. In a pan, heat oil, add sliced red onions and garlic. Let them start to cook on low flame
- Sprinkle black pepper and salt. Once onions turn light golden and caramelize, turn off heat. Keep aside
- Meanwhile, remove the tops and slice up the figs vertically
- With light hands slice up goats cheese so that it does not crumble. Keep sliced figs and goats cheese aside
- Roll out pizza base as per instructions in pizza base recipe. Prick with a fork all over
- Onto the rolled out pizza base, add a spoonful of onion marmalade. Spread all over
- To this sprinkle grated parmesan on top
- On this spread over some caramelized onions made earlier
- Arrange a few slices of figs on the pizza
- Arrange goats cheese all over
- Sprinkle little more parmesan on top. Drizzle a little olive oil on top
- Bake in pre-heated oven at 220 Deg C for 8-10 minutes or till done. This recipe is for 2 thin crust pizzas and toppings amount for 2 pizzas
- When pizza comes out of oven, spread some washed arugula on top. Serve immediately
Drizzle some balsamic vinegar on top of the onions if desired for more depth in flavour
Make circular and rectangular shape pizza. I have made both here
Use store bought pizza base if you want
