Cupcakes, muffins can be made in a wide variety of ways. So this time at FOI, we tried a strawberry cupcake, eggless as usual and they turned out to be soft and delicious. I even made a little frosting to go on top and the taste was simply delicious. You can serve these eggless strawberry cupcakes for breakfast with coffee or just as a snack at tea time.
I have used natural organic red colour (paprika extracts) to give it a nice red coloured tinge. Of course real strawberries have gone inside these soft eggless strawberry cupcakes. The main ingredient to keep them soft and moist is yogurt, so add some natural yogurt as mentioned to make these eggless strawberry cupcakes.
Optionally you can make strawberry butter cream ( I am no expert in that) or take a short cut like me and make a simple strawberry frosting which will taste just as good! - 6-7 strawberries chopped
- 1 Cup all purpose flour (maida)
- ¼ Cup heaped milk powder
- 1 Tbsp heaped corn flour
- ¼ Tsp baking soda
- ¾ Tsp baking powder
- 1 pinch salt
- ½ Cup yogurt
- ¼ Cup olive oil
- ¼ Cup milk
- 1 Tsp vanilla
- Few drops of natural organic red colour
- ¼ Cup heaped sugar
- 2-3 Tbsp strawberry preserve
- 1-2 Tbsp extra milk
- 3 Tbsp icing sugar
- Few drops vanilla
- Few drops of natural organic red colour
- 1 Tbsp milk
- Wash the strawberries, remove the tops and hull them
- Chop them roughly and dust with little flour
- In a bowl, take the all purpose flour
- Add milk powder and corn flour
- Next add baking powder, soda and a pinch of salt
- Mix well, these are the dry ingrdients
- Now in another bowl, take the yogurt
- Pour oil and milk into it
- Whisk slowly and mix till oil gets mixed into the yogurt
- Next add good vanilla and few drops of edible organic natural food colour
- Add sugar and mix into the wet mixture till it melts
- Add some strawberry jam or conserves and mix well
- Slowly add dry ingredients, a third at a time
- Slowly fold into with the wet ingrdients
- Add milk if required to loosen the batter a bit
- Now add the chopped strawberries
- Fold into the batter
- Line the cupcake baking pan and pre-heat the oven to 180 Deg C
- Using an ice cream scoop, scoop batter into the cupcake liners
- Bake at 180 Deg C for 15-20 minutes or till done
- Check with a skewer and see if it is cooked through
- While the cupcakes are baking, add icing sugar into a small bowl, add few drops of red natural food colouring
- Mix into a pourable icing with little milk
- Pour this over hot cupcakes
- Serve at tea-time!
You can skip the red natural food colouring, do not use anything artificial, just skip it
You can also add some oats if preferred
Eggless Strawberry Cupcakes Stepwise:
