A special gateau is prepared for special occasions. A moist, succulent chocolate cake filled with sweet frosting and soaked in cherry juice, sounds too good to be true. Presenting eggless black forest cake, a special childhood favourite for many.
Eggless black forest cake has layers of sweet cherry pieces soaking in a cherry juice. The layers of cake has sweetened whipped cream with chocolate shavings on top. This is a beautiful ensemble of colours. It has the deep dark chocolate colour, white whipped cream and topped with deep red succulent fresh cherries.


This eggless black forest cake takes me to my childhood fantasy land where I imagined the land I live in to be made of eatables filled with my favourites. This definitely took a special place in that world!
For this eggless black forest cake I have used my eggless chocolate cake recipe. I have illustrated in detail on how to assemble the black forest cake. With beautiful fresh cherries, this cake is a keeper for the cherry season! Moist, succulent and a treat to the eyes, eggless black forest cake

Ingredients
For Cherry Syrup:
  • ½ Cup Glace cherries
  • 1 Cup water
  • ¼ Cup sugar
For Whipped Cream:
  • 1½ Cups double cream/whipping cream
  • 2 Tbsp icing sugar or powdered sugar
For Decorating:
  • Fresh Cherries with stems as required
  • Dark Chocolate shavings/grated
Method
  1. Sieve all the dry ingredients for basic chocolate cake
  2. Prepare chocolate cake as elaborated in detail in my chocolate cake recipe. Let them cool completely, keep aside
  3. Take the glaced cherries and chop them up roughly
  4. Add water and sugar into a saucepan and bring to light boil
  5. Add chopped cherries and make into a syrup, it does not have to be thick. Strain and let it cool
  6. In a bowl, take cold/chilled thick cream
  7. Add powdered/icing sugar
  8. With an electric hand beater, start whipping
  9. Whip until light stiff peaks are formed. Keep chilled until further use
  10. Now to assemble the cake, take one baked cake
  11. Make slight cuts radially from the centre but not too deep. This is just for the juices to get absorbed
  12. Now start spooning the cherry juice, allow the juices to be absorbed before adding on more
  13. Now add a big dollop of whipped cream on this base cake
  14. Start spreading with a palette knife or offset spatula
  15. Lightly smooth out the edges
  16. Next add the strained cherries from the cherry juice concoction
  17. Spread all over and it mixes with the cream
  18. Now carefully place the other cake on top
  19. Spoon over more cherry juice and let it abrorb
  20. Again add a big dollop of whipped cream
  21. Spread and smooth out the edges
  22. Grate some chocolate in the centre of the cake
  23. Sprinkle grated chocolate onto the sides of the cake, it does not have to be perfect
  24. Next fill the remaining whipped cream into a piping bag fitted with a star or flower tip
  25. Pipe beautiful flowers all over
  26. Place fresh cherries with their stems on top in between cream flowers
  27. Chill before serving, enjoy a big slice!
Notes
Prepare the individual items before hand, assembling then becomes an easy job

If you do not have a electric hand beater use a balloon whisk or hand beater to whisk the cream

Always make sure the cream is chilled to ensure it does not separate or turn into butter

Ensure cake and juice are all completely cool before starting to frost the cake. Or the cream will melt

Inverting the cake before gives a smooth finish to top as the base is always nice and flat
