Delicious, creamy, melt in the mouth eggless bread custard pudding
Ingredients
  • 2 Tbsp custard powder
  • ½ litre or 500 ml full cream milk
  • 5-6 slices whole wheat bread
  • 2-3 Tbsp raisins
  • 8-10 cashews
  • 1 Tsp good vanilla extract
  • Unsalted butter to smear on bread
  • Cinnamon powder to sprinkle
Method
  1. In a small bowl, soak the raisins in water
  2. Take 2-3 Tbsp milk and add it over custard powder in a small bowl
  3. Mix the milk and custard until smooth and no lumps
  4. Pour the rest of the milk in a heavy bottomed saucepan
  5. Next add the custard powder mixture into the milk
  6. Keep stirring until milk scalds
  7. The custard now starts to thicken and will coat the spoon, turn off heat and allow it to cool
  8. Add vanilla extract and stir, keep aside
  9. Slice the bread and apply softened unsalted butter
  10. Roughly chop the bread slices to around 1" cubes
  11. Grease a baking dish or square ramekin with butter
  12. Sprinkle some raisins at the bottom of the pan
  13. Place the buttered bread pieces in the pan
  14. Dot with raisins and cashews all over
  15. Sprinkle cinnamon powder
  16. Now pour the luscious custard all over
  17. Bake in a pre-heated oven at 180 Deg C for 12-15 minutes
  18. Serve warm or at room temperature!
Notes
Use any kind of bread you have on hand

Skip cashews and raisins if you do not prefer them and keep the pudding plain

To prevent skin formation on custard place cling film on top of custard directly, but do this carefully
