Crisp, peppery, a delicious snack or side dish with tomato saaru/rasam baalekayi pepper roast
Ingredients
  • 1 raw plantain/baalekayi
  • 2 Tbsp ghee
  • 15 whole black peppercorns
  • ½ Tsp jeera
  • ½ Tsp uddina bele/urad dal
  • 7-8 curry leaves
  • Salt to taste
Method
  1. Wash the plantain
  2. Make slits along the peel carefully and open up the peel along the slits
  3. Slice the plantain into medium thick slices
  4. In a pan, heat ghee and add jeera/cumin, allow it to splutter
  5. Add urad-dal and fry until light golden
  6. In a mortar, roughly pound the whole black pepper-corns
  7. Add the crushed pepper into the tadka
  8. Also throw in a few curry leaves and let them crisp up
  9. Keep this tadka aside
  10. In the same pan, add the sliced plantain and a few more drops of ghee
  11. Coat with the remaining tadka and mix well
  12. Allow the plantain to roast well and crisp up on the edges
  13. Season with salt and toss them
  14. Add the tadka we made earlier and mix well
  15. Enjoy as a snack or as a side dish with saaru/rasam and steamed rice
Notes
You can also roast the plantain in the oven for 8-10 minutes at 180 Deg C

Use less amount of pepper if serving to kids

Ensure that the plantain is raw and not ripe
