Pulao is my go to one-pot dish for lunch or sometimes for dinner. Usually gets ready in a jiffy and some raitha on the side, you are set. Making an elaborate pulao will not be possible always. But making use of the same masalas and may be just 1 or 2 vegetables we can still make a delicious pulao. Carrot pulao is one of those simple pulaos you can make.
Carrot pulao is loaded with raisins and cashews making it extra special. You can obviously skip them but why not add a festive touch. The natural sweet taste of carrots makes this carrot pulao very tasty. It infact does not need a lot of masala or spices. Moreover carrot pulao gets ready in no time at all!
You can use normal rice like sona masuri rice or basmati rice for extra fragrance. Some ghee to cook the sweet grated carrots adds to the taste of the carrot pulao. Carrot Payasa
- 2 Cups cooked rice
- 1 sliced onion
- 1 Tbsp butter or ghee
- ½ Tsp jeera
- 2 cloves
- 1" cinnamon
- 10 cashews
- 2 Tbsp raisins
- 1 Cup packed or 2 grated carrots
- ½ Tsp ground black pepper
- Salt to taste
- Coriander leaves to garnish
- Slice or chop onions, dry roast them in oven for 20-30 mins at 180 Deg C or till crisp. You can choose to fry them in oil till crisp
- In a pan, heat butter or ghee
- Add jeera and let them splutter
- Next add cloves, cinnamon and fry
- Throw in a few cashews and raisins, fry
- Add grated carrots and stir fry for a minute
- Sprinkle ground black pepper, salt and saute
- Add cooked and fluffed rice, mix well
- Next fried onions can go in, mix well
- Garnish with chopped coriander
- Serve with a raitha of your choice
Add some green peas or shelled corn if you like
Sprinkle red chilli powder for some extra kick
