Lauki Idli

Idli is one of the best breakfasts ever to be invented on earth in my opinion. They are so light and fluffy and very nutritious. Adding more nutrition into your idlis, sounds good right? Lauki or bottlegourd or doodhi or sorekayi is a great vegetable. It has so much goodness, so incorporating this goodness into steamed idlis, it gets my thumbs up. Lauki idli is one of the best ways to feed fussy kids with some lauki.
All lauki idli needs is some preparation in the form of soaking some idli rice. Idli rice or fat grained rice is best for this recipe, you can get this type of rice in any Indian grocery store. I have also added some upma rava or sooji into the batter to make the idli light and to give it some extra texture. Lauki cannot be seen or detected in this idli and when you steam the lauki idli it brings a sweet aroma.


Make lauki idli for breakfast and serve with coconut chutney or dahi chutney. All the extra spices like jeera and black pepper makes the lauki idli really delicious. Ingredients
  • ½ Cup idli rice/fat grained rice
  • ⅓ Cup upma rava/sooji
  • 1½ Cups sorekayi
  • ¼ Cup packed grated coconut
  • ½ Tsp jeera
  • 8-10 black peppercorns
  • ¼ Tsp powdered black pepper
  • 1 Tsp coconut oil
  • ½ Tsp mustard
  • Few curry leaves
  • 2 Tbsp yogurt
Method
  1. Wash idli rice 2-3 times, add enough water to soak it overnight
  2. Drain the water from the rice and add to a mixer jar
  3. Add grated coconut
  4. Peel the lauki and dice them, add diced lauki to mixer jar
  5. Grind into a smooth batter with about ¼ Cup water or as required
  6. Add salt to taste and pulse again
  7. Empty the batter into a bowl and mix lightly
  8. Add rava and fold into the batter
  9. Sprinkle jeera and whole black peppercorns
  10. Add yogurt and mix well
  11. Next we will make tadka, add oil into a small pan
  12. Splutter mustard and curry leaves
  13. Pour this tadka into the batter and mix well
  14. Sprinkle extra black pepper and mix the batter once more
  15. Grease small tatte idli plates or steamer plates with oil
  16. Pour batter into these plates
  17. Stack up the plates and steam in idli steamer for 12 minutes
  18. Let it rest for 5-10 minutes
  19. Cut the idlis into small squares or serve them whole
  20. Serve hot with dahi chutney!

Lauki Idli Stepwise:
Wash idli rice 2-3 times, add enough water to soak it overnight
 
Drain the water from the rice and add to a mixer jar
 
Add grated coconut

Peel the lauki and dice them, add diced lauki to mixer jar

Grind into a smooth batter with about 1/4 Cup water or as required

Add salt to taste and pulse again
 
Empty the batter into a bowl and mix lightly
 
Add rava and fold into the batter
 
Sprinkle jeera and whole black peppercorns

Add yogurt and mix well

Next we will make tadka, add oil into a small pan

Splutter mustard and curry leaves
 
Pour this tadka into the batter and mix well
 
Sprinkle extra black pepper and mix the batter once more

Grease small tatte idli plates or steamer plates with oil

Pour batter into these plates
  
Stack up the plates and steam in idli steamer for 12 minutes
 
Let it rest for 5-10 minutes

Cut the idlis into small squares or serve them whole
 
Serve hot with dahi chutney!
