Watermelon Avocado Salad

Summer is here and a refreshing watermelon avocado salad is the order of the day. Salads are good for you, they provide fibre and all the essential vitamins. Watermelon is a very wholesome fruit, it is full of water and is rich in vitamin A & C. I can chow down big pieces of watermelon in a jiffy, love the texture, love the taste, love watermelon!
This watermelon avocado salad is dressed with a watermelon vinaigrette packed with flavours, tangy and peppy. It lifts the watermelon avocado to a whole new level, rather than adding plain old vinaigrette (emulsified dressing made of oil, vinegar/lemon and seasonings). The watermelon vinaigrette makes it even more watermelony 🙂


The salad is enriched with protein, I have added some boiled corn, boiled chickpeas to give more body and adds to the nutrition. You can mix and match any kind of boiled pulses or peas or lentils. Black beans, kidney beans etc all work very well with this salad. It only needs a little or you can skip it if you are having this for dinner. Try more salads from FOI. Cool, refreshing watermelon avocado salad, with watermelon vinaigrette

Serves: 2-3 people
Ingredients
  • ½ a small watermelon or 200-250 Gm water melon scooped into melon balls or diced
  • 40 Gm or 8-10 small pieces feta cheese
  • ¼ Cup corn boiled
  • ¼ Cup boiled chick peas
  • 1 sliced avocado
  • 1 small piece of cucumber
  • 2 celery chopped
  • Mixed lettuce 50 gm or as required
For dressing:
  • Few pieces of watermelon
  • ½ Tsp pounded black pepper
  • Salt to taste
  • ½ tbsp olive oil
  • ½ Tbsp lime juice
  • Celery leaves if available to garnish
Method
  1. Cut the watermelon into half
  2. Scoop out small balls of melon and put them into a bowl
  3. Scoop out all the other bits and pieces which can go into the vinaigrette
  4. Add the chopped watermelon into a mixer jar/blender
  5. Add olive oil
  6. Squeeze lime juice
  7. Season with black pepper and salt
  8. Blitz into a dressing, it should be thick yet pourable and coatable
  9. Next get all the other salad ingredients ready, slice the avocado, crumble some feta cheese, dice cucumber
  10. Also keep boiled corn and chick peas ready and some mixed bite sized lettuce leaves
  11. To assemble the salad, smear little dressing at bottom of bowl
  12. Place some fresh mixed lettuce leaves
  13. Sprinkle corn and chick peas
  14. Add some sliced avocado and diced cucumber and celery
  15. Next comes the grand entry, place scooped out melon balls in the salad bowl
  16. Add little more dressing and sprinkle some corn
  17. Dot with crumbled feta cheese
  18. Serve immediately and enjoy the salad!
Notes
Watermelon can also be cut into pieces instead of scooping them

Ensure big seeds are removed from the watermelon pieces

Feta cheese is optional, you can add any salad cheese or skip it altogether
