Spinach or palak is a super vegetable/greens. It is loaded with nutrients and fibre and especially good for children. Because eating spinach is somewhat clichéd, children get into the habit of not consuming this wonder vegetable/greens. But add palak into soft palak paratha, they will come back for more.
Try and incorporate vegetable/greens into the dish itself so that it cannot be separated out. It makes wonderful soft parathas and is a great dish for lunch box, picnics or travel.
Palak paratha is quite simple to make although it does require a bit of preparation. But it is worth the effort as it does not require any side dish but you can make do with some yogurt on the side. Saasme or raitha is one common dish I make with any South Indian meal like this beetroot raitha, carrot saasme, sorekayi (lauki) saasme etc. After a hearty lunch with hot and spicy sambar, huLi, saaru, kootu or rasam you will need something to cool things off. Plain yogurt does the trick most of the times.
A very good way of consuming more vegetables is to mix it with yogurt/curd to make a raitha. This beetroot raitha or saasme is a very good way of consuming this bright yet humble vegetable. ... “Beetroot Saasme | Beetroot Raitha | Raitha Recipes”

We all love instant recipes be it idlis or dosas. But instant recipes need to have the right balance to turn out to be tasty. Their fermented counterparts enjoy the time to rest and turn out to be light and airy. But adding flavourful things into a recipe like corn or spinach like this instant corn idli makes them taste so good!
Corn idli is made from corn rava (maize rava/cornmeal). This is easily available in grocery stores. Just like making rava idli, this instant corn idli is a specialty. It has yogurt added for moisture and light instant fermentation. The pop-in-the-mouth corn niblets (frozen/fresh) along with sweet raisins make them very unique in taste. ... “Instant Corn Idli | Idli Recipes”

Cooling, refreshing Greek Tzatziki dip

Tzatziki, (pronounced ta:t:si:ki) is a yogurt based dip from Greek cuisine. It is very similar to cucumber raitha differing only in the addition of certain ingredients like, olive oil and vinegar. Aromatic herbs like mint, dill (sabsige) are added to make the dip even more delicious. Mint leaves can be cut into chiffonades (mint leaves stacked up, rolled and then cut into thin long strips) or the dill leaves can be finely chopped and added to the dip. This emerald light green coloured grated cucumber dip is very refreshing and cooling. Make this for your Mediterranean platter, recipe up next on FOI. From top left, roasted red pepper hummus, plain hummus and tzatziki. As promised, I am posting the part of the photo of the mega Mediterranean platter. Enchiladas is a Mexican tortilla based dish. Tortillas covered with sauce, finished off with cheese and baked in the oven till cheese melts. This is very hearty and filling, spicy and cheese’y and how can that not taste good! I have used leftover Mexican mixed bean veg chilli which I have posted earlier. Any kind of tortillas can be used, corn, whole wheat, plain tortillas, anything you like. I have also used hung yogurt to make the filling for the tortillas instead of sour cream to cut the calories. I have also used sliced avocado for the filling but you can use boiled corn, olives, onions, tomatoes, anything you like. This is one of those dishes you can make it your own. Add anything you like, make variations and enjoy! Other Mexican dishes to try. ... “Mixed Veg Enchiladas | How to make Mexican Enchiladas?”
