Mango season means fresh mango recipes on Food Of Interest. Throughout the year I am on the look out for nice mango recipes which I can make when the mango season arrives. Cupcakes, muffins can be made in a wide variety of ways. So this time at FOI, we tried a strawberry cupcake, eggless as usual and they turned out to be soft and delicious. I even made a little frosting to go on top and the taste was simply delicious. You can serve these eggless strawberry cupcakes for breakfast with coffee or just as a snack at tea time.
I have used natural organic red colour (paprika extracts) to give it a nice red coloured tinge. Of course real strawberries have gone inside these soft eggless strawberry cupcakes. Bhel puri has to be officially the most loved chaat throughout India. Ok, this might be a bit controversial as there are some serious pani puri and masala puri lovers. Let’s just say it is one of the easiest chaats to make at home. Of course a little preparation is required but then with chaats the fun is just doubled as you prepare for it. Today let’s learn a slightly different kind of saasme, carrot saasme. A special thing about this saasme is it has a nice sweet taste and can be used as a dip just by itself.
For carrot saasme you can grind coconut and little mustard seeds add then mix it with carrot puree and yogurt/curd. Here I have made it plain and just added some chatpata flavours in the form of amchur powder and jeera-pepper powder to balance things. We often discard the leaves, seeds and peels of vegetables and fruits. There are some vegetables and fruits where the part should not be consumed (like apple seeds, tomato leaves or potato stalks) or is not edible like hard peels etc. But there is no reason why the seeds and peels cannot be consumed if they are edible. Mangalore southekayi beejada tambli is exactly the recipe which resonates the idea of using usually discarded element.
Mangalore cucumber or southekayi if it is tender, the seeds are very much edible or atleast the extract that comes out of it. So if you are making Mangalore southekayi huLi/sambar then store the seeds they can be used to make this Mangalore southekayi beejada tambli or saaru. The idea is to grind and extract the pulp and liquid out of the seeds. This liquid is then mixed with well beaten fresh yogurt. Ever bored of grating loads of coconut to make chutney, trust me I always feel bored to grate coconut. So you know who my go to person is to grate coconut at home(you guessed it). But sometimes you might also run out of coconut or have very little fresh coconut left. And even if you make coconut chutney you need to make 2-3 varieties with different spice levels for different people at home! So here is one solution to fix all your coconut chutney woes, curd chutney or dahi chutney.
Curd chutney or dahi chutney is exactly what it is, dahi mixed with chutney. So grind your regular coconut chutney with the usual ingredients in a small quantity and then mix it with smooth curd/yogurt. Dahi chutney or curd chutney is spicy, tangy and even sweet. And you are saved the trouble of actually making 2-3 types of chutneys to adjust the spice. Idli is one of the best breakfasts ever to be invented on earth in my opinion. They are so light and fluffy and very nutritious. Adding more nutrition into your idlis, sounds good right? Lauki or bottlegourd or doodhi or sorekayi is a great vegetable. It has so much goodness, so incorporating this goodness into steamed idlis, it gets my thumbs up. Lauki idli is one of the best ways to feed fussy kids with some lauki.
All lauki idli needs is some preparation in the form of soaking some idli rice. Idli rice or fat grained rice is best for this recipe, you can get this type of rice in any Indian grocery store. I have also added some upma rava or sooji into the batter to make the idli light and to give it some extra texture. Banana is my favourite fruit to cook with. You can make so many dishes with it. Every part of the banana plant is edible and in fact we cook with most parts of banana/plantain plant. A must have dish, mosaru avalakki for Shri Krishna Janmashtami along with some some fresh butter churned up for ‘muddu’ (beloved) Shri Krishna. Fun snacks offered are such as kodubale, benne muruku, chakli, kobbri mithai, 7 Cups barfi, kalakand. But the most simple and humble dish required on the day is ‘mosaru avalakki’ or dahi poha.
You can choose to add some simple tadka/vaggarne ingredients to make it extra tasty. But in general you can even it keep it plain and quickly mix this up. After eating oily snacks a few spoonfuls of this mosaru avalakki is indeed cooling.
