Creamy dreamy spinach soup for a cold winter night

A bowl of soup is food for the soul. Soups are very comforting and satisfying. Spinach soup is one of those soups which can be simply gulped down with some garlic bread on the side or just like that. It is creamy, thick and very delicious.
Imagine the warm soup going down your throat after a long day at work on a cold winter night. So what are you waiting for? Go ahead and make this creamy spinach soup 🙂
Not only do you get the warmth from the soup but also the essential nutrients from the goodness of these beautiful green leaves. Using fresh spinach to make this soup makes the soup retain the emerald green colour of the leaves.
It does not require a whole lot of flavouring at all, some simple black pepper and salt seasoning will do the trick. With my spinach dishes I usually love to add a pinch or two of nutmeg/jaiphal as it goes really well with the flavour of spinach.
You can even add a dash of cream to make it extra rich and creamier but milk also will do the trick. Milk mellows the flavour of spinach and gives it a rich smoothness. Enjoy this creamy spinach soup and here are more soups from FOI! Also do try other spinach recipes. ... “Spinach Soup | How to make spinach soup?”

Ice Cream Cake | Raspberry Swiss Roll Ice-cream Cake

Fun-filled, ice cream filled, decadent, indulgent ice cream cake
9/09/2016 7:22:33 PM vindhyadesai

Is it a cake, is it ice cream? As the name says, it is ice cream cake. Ice cream filled into a cake base and frozen back to solid. This is recipe number 100, a big milestone for Food Of Interest. Thank you to all those who have liked Food Of Interest and for trying out my recipes. It is my humble effort to try out and document Vegetarian/Vegan recipes from India and all over the world. This decadent, indulgent ice cream cake is adapted from Chef Lorraine Pascale‘s ‘Indulgent Ice Cream Cake’. It has a Swiss roll cake base (plain cake with layers of jam or marmalade all rolled into a tight roll) and vanilla ice cream filling. Use Swiss roll cake if you get it or try homemade one (recipe will be posted on FOI), or use regular Pound cake for the base. Layering a bowl with cling wrap is very essential for the cake to be inverted from the bowl and that resembles a half-spherical cake. More details in the recipe below. Please do share recipes from FOI, try them out and leave feedback on the website in ‘Comments’ section and don’t forget to ‘Rate’ the recipes on the website! 🙂 ... “Ice Cream Cake | Raspberry Swiss Roll Ice-cream Cake”

Vanilla Ice cream | Eggless Vanilla Ice cream | No cook vanilla ice cream | Homemade vanilla ice cream

Super creamy homemade favourite eggless vanilla ice cream
08/09/2016 8:29:13 PM vindhyadesai

I have not met a single soul who does not like ice cream especially vanilla ice cream. It has to be one of the most eaten, desired and versatile desserts in the world. Make ice cream at home without worries of added preservatives, artificial flavours and colours. This recipe does not involve any cooking at all. There is no need of making a custard for this recipe. The most important thing is to keep all ingredients and your ice cream container chilled and cold at all times to prevent crystal formation and solidfication during churning/blending.
I have used my ice cream machine to churn the ice cream mixture. But it can be very easily churned with a simple everyday use electric hand blender which I will describe below. It is a little extra effort when using an electric blender but worth it nonetheless. I do not have to mention the uses of vanilla ice cream, it is super tasty just plain, or with chocolate brownies or simply whipped up into a milkshake like musk melon vanilla milkshake or this decadent peach and blueberry crumble. Oh boy! Super creamy vanilla ice cream! Enjoy! ... “Vanilla Ice cream | Eggless Vanilla Ice cream | No cook vanilla ice cream | Homemade vanilla ice cream”

Whole Wheat Bread | Whole Wheat Atta Bread | Homemade Whole Wheat Bread

Wholesome fibrous homemade whole wheat bread

Imagine eating your own hand-baked bread toasted with butter and smeared with jam. The feeling is out of the world because you get to eat the fruits of your labour or should I say bread 🙂 I have added milk powder to this recipe, after I started adding milk powder to my baked goods like baked nippattu, I feel they turn out tastier. Adding milk powder to bread is also recommended by other food bloggers like ‘Sharmis passions’. Yogurt, is another ingredient I add to cakes, muffins and breads. A well received recipe from Veg Recipes of India also recommends adding yogurt to bread. It is tried and tested by many people.
Try baking bread at home, two things are for sure, your house will smell like the aroma of a bakery, all warm and toasty and two, you will once get to eat bread and like it like never before. I also have a recipe to post for whole wheat bread made with active dry yeast. For this recipe, make sure to use ‘easy-bake’ yeast now readily available in supermarkets. Free from preservatives, no unnecessary additives and no unhealthy oils like palm oil. Enjoy baked bread with jam or make toasties or sandwiches. Choices with bread are endless! ... “Whole Wheat Bread | Whole Wheat Atta Bread | Homemade Whole Wheat Bread”

If you are in a hurry and you are looking for a quick breakfast light yet filling then a smoothie is the answer. Loaded with fibre and packed with nutrients, fruit smoothies require no added sugar and are absolutely delicious. Here I have used vanilla yogurt icecream and milk. You can substitute them with a non-dairy icecream and almond milk and skip honey to make it vegan. I have also added weetabix which is a high fibre high protein biscuit. Whip them all up till smooth and you will be set for a busy morning. ... “Red Grape Apple Smoothie”

Roasted Red Bell Pepper Avocado Grilled Cheese

Red bell pepper & avocado grilled cheese with caramelized onions & honey mustard sauce

Sandwiches are a very popular snack liked by both kids and adults. The ways to make a sandwich are endless. Let me share a little anecdote with you all about the origin of sandwiches. I read this little story in a supermarket cafe near my home. Sandwich was apparently invented when a snack was demanded by an Earl from his chef. The Earl wanted a snack for which he would not have had to use a fork and knife to cut his food. The chef thought about serving bread and vegetables in this unique way and thus the ‘sandwich’ came into being.
For this sandwich I have used roasted sweet red bell pepper, healthy and tasty avocado, creamy honey mustard sauce and cheese sandwiched between toasted slices of multi grain-seed bread. ... “Roasted Red Bell Pepper Avocado Grilled Cheese”

Peach and Blueberry Crumble

Juicy fruits baked with a crumbly top served with vanilla icecream
04/24/2016 8:23:08 PM vindhyadesai

Crumble is a famous English dessert made from juicy fruits like peaches, plums, apricots, cherries, blueberries mixed with sugar. On top of these fruits a crumble topping made of flour, sugar and butter is added and baked off in an oven till crisp and golden. ‘Crisp’ is another variation of a crumble which generally has oats on top which crisp up when baking. This one is a delectable dessert and I am sure everyone will love it especially if it is served with vanilla icecream. Here I have used peaches and blueberries. Peaches are best in summer, flavourful and juicy. Peaches are like almond fruits, cherry fruit or plums. I love the crumble recipes from Ina Garten of Barefoot Contessa. ... “Peach and Blueberry Crumble”
