Starting your Sunday morning or any morning with dosas just off the tawa, sounds like a great idea. But want to try making a different kind of dosa? So here it is, cucumber neer dosa or southekayi neer dosa. Lacy, soft cucumber neer dosa speckled with light green cucumber not only sounds nice but also looks and tastes great!
You can soak rice overnight or just for 4-5 hours. Then you can grind rice with the remaining ingredients and then immediately make dosas. You can also keep the batter overnight/or few hours to lightly ferment and then make cucumber neer dosa. Either way they are delicious. The last time I made them I served them with sorekayi saasme but you can serve with any chutney! ... “Cucumber Neer Dosa | Southekayi Neer Dosa | Dosa Recipes”
Easy to make, no soak, no grind, crisp urad dal flour and rice flour dosa
09/30/2018 1:59:39 PM vindhyadesai
Dosa means different things to different people. For some it is just a breakfast that they can have once every few days. For some it is an everyday affair, gulping down dosas in darshinis and hotels day in day out. And for some ‘the dosa’ is an emotion, it is the crisp sound of breaking the dosa and dunking it in chutney or sambar. It makes them just happy! I borderline between the 2nd an 3rd categories, just love dosas. But grinding dosa batter is not child’s play. This urad dal flour and rice flour dosa comes to your rescue.
If you are craving for dosa the next day for your breakfast (sometimes I dream about dosa, that is why borderline :)), you do not have to wait, 8 hours soak-time, then grind (an uphill task for a few & I don’t blame them), 8 hours fermentation. It indeed takes a lot of time to dish out good dosas. This urad dal flour and rice flour dosa definitely ticks a few boxes. ... “Urad Dal Flour And Rice Flour Dosa | No-Grind Dosa | Dosa Recipes”

Variety of dosa recipes are a must for a South Indian home cook. Dosas are not just masala dosas as many think , they are much more. There is so much variety, so many recipes to play with. The end result is always tasty, delicious dosas for everyone to enjoy! This red rice dosa is one such great alternative to prepare.
I had raw red rice at home and also some red rice poha (flattened rice/avalakki). The best way to use red rice is to make red rice dosa, you get a lovely coloured dosa and the texture is crispy on the outside and soft inside. ... “Red Rice Dosa | Kempu Akki Dosa | Dosa Recipes”
Green & bright, full of nutrition, palak paddu, perfect for breakfast

I like to include bright greens mostly in paratha or thepla form. I also include greens in dosa, idli, mixing it with the batter. This time I experimented with Paddu or Gundupongala with spinach, palak paddu.
That day I had planned to make palak pathrode or patra and I had soaked rice. Unfortunately I had run out of tamarind, so I decided to make palak paddu. It was a hit! ... “Palak Paddu | Spinach Gundupongala | Paddu Recipes”
Super delicious and always fun to eat, peppy paneer pizza

Who does not like pizza, but having pizza outside is generally not healthy. How about we make whole wheat pizza with our choice of toppings. So this time we are back with a fun to eat pizza, peppy paneer pizza. I generally use my whole wheat pizza dough and pizza sauce recipes.
Peppy paneer pizza has some mild bell peppers or capsicum. We have also thrown in some soft paneer making it a very desi pizza. Generally I’m not a big fan of fusion food, I do make some exceptions though. ... “Peppy Paneer Pizza | Paneer Capsicum Pizza | Pizza Recipes”
Delicious and healthy, menthya soppina dosa or methi leaves dosa
04/26/2018 10:18:23 PM vindhyadesai
Finding ways to make dosas is one of my favourite activities in cooking. Dosas are delicious any day be it neer dosa, hotel style rava dosa or the ever favourite masala dosa. If you can incorporate leafy veg like menthya soppu/methi/fenugreek leaves to make menthya soppina dosa then kids will love it.
Menthya soppina dosa is also rich in protein with toor dal and urad dal. Rice provides the body and the all the masalas are added while grinding the batter giving it a super tasty flavour. Finely chopped methi leaves are then added and dosas are made. Menthya dosa tastes best with only a dollop of ghee. Some chutney on the side can also be served. ... “Menthya Soppina Dosa | Methi Leaves Dosa | Dosa Recipes”

One more protein filled breakfast dish from FOI, made from mung beans/hesaru kaalu this time, pesarettu. Pesarettu is a classic Andhra breakfast, it is a type of dosa. Pesarettu is generally served with upma and allam chutney. Both of these recipes are coming up next.
Pesarettu are nice and crisp and the batter is also quite easy to prepare. As with mung dal paddu, pesarettu also is a good change from making urad dal based dosa batter. It is nice and easy on the stomach, the beautiful green hue is such a pleasant colour it makes these dosas even more appetizing. ... “Pesarettu | Pesarattu | Breakfast Recipes | Dosa Recipes”

A variety of simple everyday ingredients converted to yummy and tasty dishes. Once such dish is this mung dal paddu or hesaru bele paddu/gundupongala.
As I had mentioned in my previous paddu post, Davanagere benne paddu, paddus are crisp like dosa on the outside and soft and spongy on the inside like idlis. Mung dal paddu also turns out crisp on the outside and soft inside. Healthy, colourful, beetroot sambar, easy preparation for lunch
07/15/2017 10:24:56 PM vindhyadesai
Like I have mentioned in my previous recipes, beetroot is such an underrated and underutilised vegetable. It has very many nutrition qualities associated with it. If you like sambar/huLi then you must try this beetroot sambar.
Beetroot renders a deep burgundy colour to this sambar making it extra special compared to regular brownish looking sambars. Beetroot is one of those vegetables which bleeds its colour to everything it touches. But it does good. ... “Beetroot Sambar | Beetroot huLi | Beetroot Recipes”
